This puree style saag or even palak in a lot of cases...is a little more of a modern twist because it is blanched and then put through a blender...but yes the more traditional style is a pounded style which has a lot more body!
Here is a helpful tip that works for me. Take the help of a spoon while scooping the gravy and vegetable on to the Naan. That way you will get more gravy and vegetable onto the Naan.
Actually shrimps and spinach have their independent salt content, irrespective of added seasoning. So probably to avoid added salt , these ingredients are together. Besides oven cooked shrimps tend to be crisp and won't take curry well

Cashews are grown on the western ghats of India - Karnataka and Goa region! Lot of restaurants in India and abroad use cashew paste in their curry’s to give volume and texture. It also softens meat dishes. There is also an interesting alcoholic drink called Fanny made from cashew fruit, popular in Goa.

Fried cashewnuts may have been added because those who have an allergy can remove them although cashew nut paste adds body and volume to curries which can have excess watery consistency due to tomatoes and or/oil
You must try Rajasthani cuisine once , most of the dishes are vegetarian but worth trying and you'll find a complete different taste there .Some of the dishes are daal-baati-churma,mirchi bada,pyaaz kachori,gatte ki sabji,bajre ki roti and so on .For desert there are options like ghewar,moong dal ka halwa and stuff.

Hello, back again! I was just holding off commenting because I wanted to welcome you to Bangalore in Jan 2022 first (is that trip confirmed?). We need to do some homework on the Bangalore food scene for you both to have the best tour here. Working on gathering info about the non-veg scene (especially native (or "naatti" in local lingo) dishes as compared to modern fancy restaurant dishes) At 6.40, gravy with tomato and onion - onion and tomato are at the core of MOST of the curry gravies. In fact, many restaurants make a curry base of these two and variations happen when the spice combinations are changed and a few other ingredients are added. At 8:00, why "sorry"? Indian food can be eaten in almost any way you want (except the gross ways :)). The way you loaded the kaju curry (usually mild, creamy spice) on the naan is perfectly done! There are a number of curries with white sauce and creamy sauce that you must try. Most of the curries you have had are spicy, dark ones!!! In Indian food, there can be no favorites! :) Each dish is different and unique and each one, taken separately, becomes your favorite for the moment !!! :)

I don’t know if you know the difference between Saag dishes and Palak dishes. See Palak Paneer is Spinach only and Paneer but Saag is a mixture of Spinach and Mustard leaves.

In my opinion, one thing you won't find in restaurants there is "Churma".. It's still made traditionally in Indian villages, a big time delicacy. Or maybe you guys can try to make it on your own. Peace.

Till the time right now I have been in the US, never ever got the great taste similar to India. In the US the taste of all the India Food is a little dull than what you actually get in India. And that may be because most of the people over there may not handle the heat in the food.

My first day in an American school was in 1970. That alone should paint a picture of the lunch room and the kitchen ladies. The lady who served me was very nice and very loud (I imagine because speaking loudly helps non-English speakers understand English). She told me what my choices were, and was surprised to see the yummy look on my face when I saw the liver and onions and the boiled spinach. I think she kept an eye out and commented on my way out that my mom must cook them differently, "Huh?". Yes. Decidedly yes. Lol!

Tough question. It completely depends on the day. Sometimes I’m craving pizza or an amazing American breakfast. Other times I need curry or chicken tikka. I can tell you that my favorite foods are Indian, Thai and American!!

Pounded are healthier as fibres are not broken unlike in puree. Indian traditional methods have scientific reason behind it.

Spinach is not saag. Green leafy vegetables are called saag. They might range from mustard greens to Fenugreek leaves to nettle amongst a few.👍

Tough question. It completely depends on the day. Sometimes I’m craving pizza or an amazing American breakfast. Other times I need curry or chicken tikka. I can tell you that my favorite foods are Indian, Thai and American!!
