Farm raised is often just as good as wild if you get it at the right place. Plus its sustainable. Which is something we desperately need in this day and age. Respect it.

This looks great. At the restaurant I work at we use yellowtail tuna, salmon, whitefish (escolar), and avocado instead. We don't carry tobiko though. I would like to use it, as it is a nice final touch.
