Hi! I'm coming a little late to the party, but wanted to share a tip for the brake bleeder pump to make it easier to pump as pressure builds - esp. with arthritic hands like mine (or just weak hands). The red pumping handles - holding them in your hand as you prepare to pump them, set (or rest) the bottom of the red handle furthest from you (the handle that is touching your fingers) on the counter or table as you pump: it doesn't slip or slide or move around and resting it on the work surface stabilizes the pump so it isn't bopping all around in the air; it allows you to pump at a steadier, quicker rhythm with the handle in your palm because you're just pushing one (the palm handle) of the handles into the other handle (the finger handle) that is stationary - you're not squeezing both together simultaneously - the one resting on the table doesn't move and you just press the handle that is in your palm against the one "sitting" on the counter - it builds that pressure you want more quickly with a lot less stress on your hand.

My hubby made me several vacuum chambers. (1) large heavy vase we had he made a wooden lid with rubber gasket hole drilled to fit hose attachment.
    (2) using an old drink thermos with the rubber wine stopper cork. Then when I finally got my foodsaver canisters. The largest one fits jars inside

I have the exact same brake bleeder :-) Its worth it for those one off jobs and security of having a non-electric option since we live in a very rural location that is prone to power outages. I have a bit of arthritis so if my hand gets tired and I have more than one jar to seal, I've found I can rest one side of the handle against the edge of the counter then let my body weight assist in pushing the other handle to squeeze the two sides together to pump up the vacuum.

@Steven Check out you tube channel- Rain Country. Her husband makes canister vacuum sealers and she puts them up on her Etsy site from time to time. Also search DIY vacuum canisters on you tube. The canister I got was a never used, no longer marketed, large canister from Food Saver,, larger than their trio set they used to sell. I found one on ebay.

I found out you can use an electric tire pump or a little generic vacuum pump which eliminates the hand pumping the brake bleeder. It will probably last a lot longer than the Foodsaver one for jars because it is built to vacuum a lot more in its actual use! Just wanted to share. You can also hook it up to a larger pressure cooker and vacuum many jars at once time! This includes things for the fridge like mayo, sour cream, meat, fish, fruits, soups and so on!! Very happy! Nice video and I wanted to share this because my Foodsavers wear out since I use the jar sealer more than making the bags, because I can re-use them again and again!

Hi Darcy, I recently found your channel, when I was looking for alternate ways to seal canning jars with my Food Saver lids. I have been using the lid sealers for several years now. I wanted a way to seal my jars in the even that I don't have power. Also, my machine doesn't have an accessory only switch, so every time I use it, it heads up the sealing strip and I don't want to wear it out prematurely. On Monday, after watching this video, I used your link to order the brake bleeder kit. It came today, and using the hint on this thread from R10GreyhoundsRule about resting the front red handle against the edge of my counter, it was easy to do and it worked like a charm!!! I love having the pressure gauge, so I know it is properly sealed. I may also get a hand held vacuum sealer so I don't have to get the brake bleeder out every time, but then again I may not! Also, thanks for sharing the regular lid sealer trick. Regular lids often don't seal the first time. I thought it was because I was reusing lids or there was something wrong with the jar that I wasn't feeling when I wiped it clean. Now I know that it just wasn't me, and how to work around the issue! Thanks for sharing such useful information. I look forward to watching more of your videos. Blessings :)

Thanks for the comparisons. I've been trying to find information regarding the hand held vacuum sealer for some time now. Even their promos online don't show you how you can vacuum seal with the foodsaver lids. I have both the regular and wide mouth, but my old foodsaver bit the dust. I really was interested in just the hand held as opposed to buying the whole bulky thing that takes up so much space. Now I know I can buy the hand held and still vacuum seal my jars. I will be getting a brake bleeder though as well in the future. I think it would be wise to have it on hand just in case of a power failure for the same reason I have a hand crank can opener even though I use my electric one all the time. You just never know what is going to happen. I'm learning so much from your dehydrating videos. I bought a small Nesco dehydrator that you featured. I'm a widow and don't need a large one. This small one works great! Thanks for featuring it.

I’ve only started to do canning and do all my own produce because I’m doing my own beef and pork and making bacon myself now I went out and bought a chambered vac sealer it’s a bigger investment for sure but I just put the jars inside and if seals them no fuss I think it’s great.

Instead of using your hand to pump the brake bleeder (which is super difficult for people with arthritis), try resting the back of the handle against the counter, and then press the top of the handle up & down... it's still tiring, but not nearly as much.

Just out of curiosity, I checked the price of the canister set. Whewie! I saw the Cambro RFS6PP190 6 Qt Round Container with RFSC6PP190 Translucent lid included for $12.25 Amazon Prime. Make sure you get the order with lid included, the others, lid is separate. A quart jar fits inside. I put a hole in the lid that my break bleeder tip fit. The container is pretty sturdy. It didn't work with the break bleeder but it might with a foodsaver. I don't think the suction was hard enough. I just put a food safe plug in the hole. I can use it for dough & pull the plug to blurp. Nothing lost. Anyway if you can not get sealing lids this might be an option.

    • @oldtimerlee8820
      @oldtimerlee8820 3 роки тому +1

Depends on the type canister. I have some canisters that require the jar attachment. Don't buy them until you know you can plug the vac hose directly into the lid of the canister.
Make sure, too, that the jar you want to seal fits into the canister under consideration. These canisters came in a variety of sizes and styles, over the years. While all sizes of them are useful, you may be limited to vac sealing 1/2 pint sized jelly jars.

wow, you're very good at explaining this..... If I'm canning jam, should I fill the jam right to the top or leave an inch or so? I know you said you can suck up your goods and create a barrier, so maybe a bit of a gap is wise, but the bigger the gap, the more work you put your device/hands at to create the seal correct?
Thank you for sharing your knowledge!!!

    • @ThePurposefulPantry

@@ilvahertzler6571, do you mean dehydrated product? Dehydrated product, you can use the food saver. If you mean to can prepared foods, or tomatoes and other veggies from the garden, they have to be canned. Depending on what you are doing, either water bath canned or pressure canned. With either of these two canning methods, the jars would be sealed through that process, not using a food saver jar sealer

Just some tips on canning (I see your comment was last year.) However I really don’t want to see someone get sick or waste expensive food and time. With that said I would suggest buying a current Ball Canning book as it tells you step by step methods and has some good recipes.
The old canning books have misinformation in their canning guides that aren’t safe. The process of canning heats foods to temperatures that inactivate enzymes and destroys microorganism, spores that could cause illnesses such as botulism.
Using a pressure canner is the only safe way to can low-acid foods like corn, beans, and pork without pickling them…
Waterbath methods is for high-acid foods like fruits, tomatoes, pickles…

Hi ! I haven’t come across an answer to this on a video yet, but do I need to sterilize the jars before vacuum sealing ? I have been washing the jars in hot soapy water, letting them air dry completely overnight, and then filling with prepared dried food ( I.e. rice, pasta, marshmallows) the next day and vacuum sealing. Hope I’ve done this correctly? I understand when canning ( like making jam , or preserves, or pickles) the jars should be sterilized first.

I buy white paper lunch bags. Fill almost full with flour. Fold over the top of the bag and insert it upside down into a FoodSaver bag. Then, vacuum seal the bag. I've tried to store flour in jars using various filters (plain paper cupcake liners are another option). After using filters, I can feel the flour residue inside the jar sealer, so some of it can still reach the vacuum pump.

I don't, yet ;) But it's helpful to put them into a paper bag or a zip top bag first, then vacuum seal them the way you wish (jar, vacuum seal bag), so that the powder doesn't get into your machine. You can also use a muffin paper or coffee filter inside the jar before you vacuum seal it.

Hi, great video! Everytime I watch different people vacuum seal dry goods in jars I can't get a clear answer on the eggs/bugs/sterile situation.
When I vacuum seal things like pasta/rice/ dry beans...do I need to put the clean jars/lids/rings in the oven an 225°?
Do I freeze the dry goods (to get bugs out)? Do I put the dry goods in the jars and then put them in the oven?
What do you recommend as far as what do you do to your dry goods before they go in jars (freeze, thaw, etc.) and is it necessary to heat the jars, rings, lids after washing.....

    • @ThePurposefulPantry
      @ThePurposefulPantry  3 роки тому +5

As far as the oven goes, even the jar manufacturers say no. Not only is it not a safe preservation method of introducing moisture into goods, the jars were not meant for dry heat. So no, I don't recommend any form of preservation in the oven with jars.
The standard suggestion is to freeze your dry goods for 3-4 days before introducing to your permanent storage. It is no longer necessary to heat jar lids for preservation because the compound used has changed from the past, and it's not needed. Jar heating is only needed if you are processing hot food - then the jars should be hot. I do warm my jar lids, but I don't heat to sterilize.
You're welcome to sterilize jars, but I would wash in hot water, run through a sterilization process on your dishwasher or boil them - never use the ove.

@@KVTB01 I don't sterilize jars when vacuum sealing dry goods because the food going into the jars isn't sterile. Remember we have to rinse dry beans to remove harvest dust and such before cooking them. Also, if the food in the original packaging was "sterile", usually isn't, nothing in our kitchen environment is sterile. Hands are clean, but not sterile. Same for funnels and such. Even the air. We can make sourdough starter from the yeast in our air. A sterile environment looks like a laboratory with workers wearing hazmat type gear. The lab will have negative air pressure and other such safeguards.
Additionally, for microscopic organisms, that cause food to spoil, to thrive and reproduce requires moisture. Properly dried foods for storage, don't have enough moisture. That's why a bag of rice can stay on our dry pantry shelf for a year. Yet, once we cook it, we have to refrigerate the leftovers to prevent spoilage. One of the signs of poorly dried food is mold.
Insect infestation and damage is a different problem. I also use the freezing method to kill these pests. "Oven canning" of dried foods is actually cooking food, which will be cooked again. Each time the food is heated, more nutrition is lost.
      Hope this helps a bit.

By taking a step at a time, you'll soon see the relationships involving specific types tasks. You'll see where certain principles overlap differing tasks.

You should use the rings for safekeeping. In case the seal fails (which it does happen), the lid will just come off and food will absorb whatever moisture is in the atmosphere. While using lids with canned foods isn't recommended because it can create a false seal and you don't know the seal broke and that the food has gone bad, dehydrated foods are best kept with the ring on to keep the lid on in case of failure.

I rarely use O2 absorbers except for very long-term dry storage, or items that I cannot vacuum seal. What happened with yours, most likely is that they weren't all dehydrated fully or your vacuum seal failed. Just throw them back into your dehydrator and dry them again - they're fine to do. But you can use O2 absorbers in anything that is fully dried and conditioned, that you plan on putting back for long-term storage. Know that once you open a jar, you have to replace the absorber.

Vacuum sealing prolongs the shelf life of dried foods by removing some of the oxygen from the container. Thus, reducing the effects of oxidation. I've successfully stored dried peas and rice, for example for 10+ years in sanitized 2 liter soda bottles without any form of O2 removal.
I've reused pickle jars, pasta sauce jars (prefer glass over plastic, but both work), peanut butter jars and more. You can double bag in zippered FREEZER bags. Think about the shelf life of many dry things purchased from the grocery store that are not vac sealed. A few weeks or months of storage without vac sealing won't materially change the shelf life of many things we typically dehydrate.

Last week I found an unopened jar in my pantry... in perfect condition! It's been 10 years! No vacuum seal. I suggest you go ahead and start dehydrating. You can always transfer your ptoducts and vacuum seal later.

Isn’t there another method, dry canning using your oven?

It's not a safe approved method and I never recommend it.

And even the jar manufacturers don't recommend it.

@@maryholton162 Additionally, using the time & temp often recommended, the food ends up being cooked twice. In the oven and then when used in a recipe. Thus, even more nutrition loss from heat FWIW... I make pork BBQ using 220F. This is hot enough to render lard. Affect vegetable oils in corn, beans & such?
