i prefer to use natural lump charcoal that does not give food a lighter fluid taste, and i also use a starter chimney that works great to start your coals without any lighter fluid. Weber makes a great one.

Darryl, we just bought the same smoker that you have. I haven't used it yet , but I had the idea of using charcoal just to get the fire going and use wood for the rest of the cook. Thanks for confirming my idea.

The manufacturer makes covers that fit the grill and smoker unit, which are also sold separately as a small, more portable grill. They are built to endure another Vietnam War or two ; good thick steel and very well built, sold at Lowes. I have both, the larger grill plus an additional smoker unit for a portable unit. Thanks for the video, it really did help, but get rid of that matchlight, and get yourself a chimney starter, and use regular charcoal. That Matchlight will leave a chemical taste in your food.

Hey my man! I love these kind of videos and I loved this one. May I make one suggestion though my brother? A charcoal chimney. I'm telling you my dude those are the best things in the world! Get those Kohl's rolling in that chimney, drop them down into that grill, and your golden.
You have to be sure not to leave that wood ash in there past the day after you cook. Lye is make from wood ash and water. Basically, you are allowing it to rust out by leaving that wood ash in, and letting it get wet in the rain.
I saw some other video. Mad science bbq channel guy. He says to spray with cooking oil to prevent and remove the rust on the fire box. I don’t have an offset smoker or anything though so take what I say with a grain of salt. Otherwise, thanks for the video! I was curious about your grill. They have it on sale at my local supermarket and I just learned today you can put that firebox attachment and make it a smoker.
I guess this is a dumb question but when using the smoker , do you place the meat (in the grill) directly on the grill racks or do you place them on aluminum foil ? I'm a newbie 😊
Hey buddy I just got a chargrilled offset just like yours. I been smokin for 25 years but I cant get this thing to work right lol it smothers it self out with ashes after 3 to 5 hours and I gotta pull the fire pan dump it and start over. I've tried big splits like you got and wood hunks smaller but I dont know it either spikes or drops out no matter how I do the vents. I've had offsets before but maybe because the lid dont seal tight? Good video thanks buddy! Have a great day
You have to keep a watchful eye on it when using larger wood pieces normally try to add a new log once an hour but check in between. Smaller wood burner a lot quicker but if it’s burning too fast just keep adding wood. Open your side vent all the way up and try to catch a good wind flow into the fire box
Nice Video, but trust me those few charcoal that hadn't turned completely white/gray would have been just fine to put your wood on. If your wood was warm, then you could have put wood, and your food on at that point and without fear of your food taking on bad smoke. I've done that for years. So every charcoal doesn't have to be completely white, especially when it's just a few like I seen or at least from my
Get a charcoal chimney. Use lump charcoal. When ready dump it near you're intake. Use the other side of your fire box to stage your wood. Gets it hot, ignites almost instantly, instead of smoldering. I get much better results doing it this way. Easier to control fire management imo.

I'm a homesteader in Hawaii. wanna build a fire box inside my cabin, have my meat barrel outside. I'm gonna vent it out the side of my house into the barrel. how long vent is too long you think? any tips?
My real question was if you’re using nothing but briquettes once you have your briquettes lit and you have your temp up how do you keep loading briquettes without a bunch of smoke?
Where do you buy those big pecan logs ?? I don't see them at home depot . Only chips in see . I really don't wanna use chips or else im gonna be glued to the bbq all day adding chips

How do I add moisture to the meat? I have a stand alone smoker and when I use it I have a water pan. How can I add a water pan?
I usually just sit a small pot of water on the grill to get moisture in the pit and get a spray bottle and keep the meat moisturized
