I got my first offset smoker almost 2 years ago and still haven't used it! I've just been using it as a regular charcoal grill. This video really helped give me the confidence to give it a try though. I have my first batch of bacon I just finished curing and I'm going to smoke it today with some mesquite chips! Thank you I am glad you explained how to use one in a short amount of time. I had been looking at those at Homedepot and wondered about how to use one. So basically one compartment is where you put your charcoal/wood for the fire and the heat and smoke generated fills the larger compartment where you put all the meat

Great, great video!👍🏼 Also, if your temperature stalls, you can also move your fuel source (logs) around ,or even flip them for an even burn. It's all about practice and learning how your off-set smoker works.

Dutch, thanks for keeping it simple. I have been using a Charbroiler gas BBQ and a Weber kettle for years and years. I enjoy outdoor cooking , now I want to do it 'the right way' since I am retired and have the time.Saw a Char Broiller Smoker Champ at Home Depot today, and the price is right. The Weber will be shit canned soon.I've talked to so many people about BBQ and Smoking and everyone is an expert with too many complicated rules to BBQ and Smoking.Your video hits the point and is 'to the point'. @@nocando5365 I found that the usual briquettes I bought didn’t get enough heat but lump wood was far better. I bought a box of big pieces and they were superb with some wood chunks for heat and flavour. Also bought some probes so I could get more accurate temps which saves me from opening the hood too
Got a "hand me down" smoke hollow ,, I'd never used an offset rig before BUT, I love it,, getting better with practice but,, it's all been AWESOME, holds bout 200* to 210*, smoke rolling the whole time,, put in a couple o sticks every 30 min or so, love it ❤️

Wow, major flashback. I had this same exact model over 20 years ago except that I got it on sale ($100 out the door) at Orchard Supply Hardware and it was missing the firebox. I had no idea it even needed a firebox. I had no idea how to smoke meats. So I treated it like a Weber. It worked fine as a regular grill. I even did some indirect by putting a fire at one end and tossing plum logs on top of the charcoal. Eventually it rusted out and collapsed. Later I discovered smoked meats and wound up buying a vertical propane cheap at Home Depot. And then that rusted out. I'm in the market now, and having studied different kinds of smokers, I'm realizing that was I had would have been ideal. Funny how that works out. I'd like to build one.
@@asmarcrawford7880 Wood blocks can get the temperature up and seems to burn longer than charcoal but I did figure out how to regulate the temperature.

Hey Dutch, thanks for this video. It was more informative to me, someone who has a smoker (just bought a Char-Griller 5050), than most videos I have seen so far. I have zero experience with *cooking* on a smoker, but I have experience eating smoked meats (he he). Anyway, I think I missed an important detail or explanation. You explained: 1. Charcoal in the smoker box, then after they turn white-hot, 2. Add wood that produces the smoke (can you add soaked wet chips to this side on top of the white-hot coals?), 3. WHY add the pan of water to the charcoal section of the grill? 4. Also, is there hot coals on the charcoal section - that's the detail/explanation I think I missed. Thanks in advance. Warron
Yea you can add wet chips if you want. I use logs or split logs in mine and they produce plenty of smoke. When I had an electric smoker I used wet chips all the time. Produced more smoke and got longer burns.

Good video. To the point. I don't know how ling I've had mine. It's a lot thinker metal than the ones they sell now. I cook/ smoke all kinds of stuff on it. Right now there's an 8lb ham on it. Temp is easy to maintain. A note, make sure to keep your thermometer probe clean otherwise it can give you a false readin. Love mine.It's in constant use. Did pork loin chops on it last night.
