I have friends who prefer the thinner crust pizza because they don't want all that dough interfering with the rest of the flavors going on in the pizza

As a pizzaiolo, I would recommend not to use lukewarm water but instead either room temp or fresh water so that you can work the dough longer without heating up the dough too much.
Looks amazing but I’m still in the process of getting all the tools I need to cook. Got myself a nice 8in chef knife but I need to get my own pans and a nice shorter chopper/bench scraper. Because of my dietary needs I have to pay close attention to things like too much salt. So learning to cook for myself so I can have food that isn’t bland boiled chicken.
Does tucking the tomato into the edge of the pizza make the crispy bits? I thought it was the cheese that you put at the edges that seep into the edges and bottom of the pan that create those crunchy bits???
