I have Calabrese ancestry which made this dish all the more special, and I must say, I prefer it to Pasta alla Norma, that I would sometimes make in summer. I prepared the sauce with honemade long riged cavatelli. Unbelievable. As good as any pasta dish I've ever made. My 7 year old sons eyes rolled.

My grandmother never deep fried the eggplant, it was just softened and cooked through in olive oil and a little garlic. There was the beautiful velvety eggplant flesh and then that toothy bit of skin and it made such a wonderful contrast. I can never get enough of this dish and when I make it, I make a lot and eat it for several days. Just heaven on a plate.

What a looooovely plant based recipe, if only you drop the cheese! This would be a great option for using the «cheezy parm topping» (as I like to call mine) that most of us vegans and plant based folks make to use in place of parmegiano reggiano or parmesan (blended roasted almonds and/or cashews, nutritional yeast and garlic powder - very delicious topping for pasta etc for anybody, you don’t need to be vegan to enjoy such a delicious topping!). Would be super to mix with the bread crumbs here too! 😊

Gonna try this asap. How do you counter any over-acidic tomato sauce? I've tried sugar and baking soda, separately, to tone down the acidity but sometimes the tomatoes are still too acidic. TIA.
This recipe looks amazing. Maria is a great cook. But I for one have never had an issue with eggplant being bitter. I find that The bitterness goes away if I just cook it in some olive oil and add a pinch of salt.

When you want to press out water of foods like the eggplant here (or cooked/marinated vegan meat etc), an easy way is to use your potato ricer, if you have one. I find it a lot easier on my hands, especially since I have joint problems, but it makes the task more easy and effective for anyone! 😊

To counter over-acidic tomato sauce, try adding a pinch of salt or a splash of cream. They can help balance the acidity. 🍅🧂🥛

This recipe looks amazing. Maria is a great cook. But I for one have never had an issue with eggplant being bitter. I find that The bitterness goes away if I just cook it in some olive oil and add a pinch of salt.

When you want to press out water of foods like the eggplant here (or cooked/marinated vegan meat etc), an easy way is to use your potato ricer, if you have one. I find it a lot easier on my hands, especially since I have joint problems, but it makes the task more easy and effective for anyone! 😊

Interesting right? Old school don't use pasta water but use more sauce. Nonna never used pasta water in her pasta but she has her technique to make the best pastas I have ever tasted
