🌻 ABOUT COSMOPOLITAN CORNBREAD 🌻
In 2016 my husband and I retired from active duty army family life and planted roots in Alabama. We started a homestead from scratch, and shared that journey here on UA-cam. In 2022 we answered the call to the mountains of Arkansas, where we are starting that journey once again.
I post videos to encourage families to embrace growing food, cooking real food and living a simpler, slower, faith-filled life. I am a whole bible believer, and share my passions for the home and the Father.
Here on Cosmopolitan Cornbread some of what you will see include:

We had a similar cake in home economics class when I was 16 years old. That's one class we should bring back in schools...Along with money management, wood working, mechanics ect....
I first had this cake in the cafeteria at school around 1966 and I loved when they served it. Later on, I searched for the recipe, trying several until I found one like yours, and that was the cake I remembered. The only place mine differs is that the coconut and some pecans are cooked w/ the glaze and the glaze is poured on a hot cake, that you've poked holes in. Back when I was in school, school lunch rooms always had great food, made from scratch.
I think I'll try the recipe with the differences you mentioned. Sounds yummy!!
Constance, my Mom would make this cake very often. I've read in other recipes where coconut used to come in a can. My Mom's recipe used the butter, brown sugar, vanilla and cream topping as well but you put in the coconut last, pour it over the cake and then put it under the broiler till lightly browned and bubbly. Just another way of making it. Such a yummy cake.
That's the recipe I remember.
I believe what you have there is a Lazy Daisy Oatmeal Cake, a Southern Living recipe, but also a staple in many community/church cookbooks. Here’s a recipe for the topping, which is broiled. Interestingly, you used to be able to buy Angel Flake Coconut in a small can many years ago.
6 T salted butter
1 C light brown sugar
6 T canned evaporated milk
1-1/2 C sweetened flaked coconut
3/4 C toasted chopped pecans
While the cake cools, prepare the Topping: Bring butter, brown sugar, and milk to a simmer in a medium saucepan over medium-high, stirring to melt butter. Cook, stirring constantly, 1 minute. Remove from heat, and stir in coconut and nuts.
Immediately spread topping over warm cake. Broil on center rack in preheated oven until topping bubbles and begins to brown, 2 to 3 minutes. (Watch cake carefully to avoid scorching.) Cool cake to room temperature, about 1 hour. Store at room temperature an airtight container or wrapped in plastic wrap up to 4 days.
I thought that recipe looked familiar. I looked thru mom's recipe. I compared the two.( I took a snapshot of the card when you held it up) It's exactly the same. Lol. Mom's was written on a paper which had some age on it. No pan size listed either. The topping was listed too. It says: Mix 6 tablespoons butter 3/4 cup of brown sugar, 1/4 cup cream, 1/2 teaspoon vanilla and one cup coconut together. Put this mixture on top of the cake and put under broiler. I remember her serving this to us I think in the sixties. I was a pre teen. I'm 74 now. I really liked the oatmeal cake with the broiled topping.
I love it!!! I had never had this cake, but so many are saying they grew up with it. That warms my heart!
I have that almost exact recipe given to me by my Mother. She had told me it was her best friend’s Grandmothers recipe so circa 1930. It’s called a Lazy Daisy Oatmeal Cake here in Massachusetts. Haven’t made that in years. It’s on my next sweet treat to make list. Thanks for reminding me of it!
Oh , Constance ! Beautiful scenery , lovely pottery bowls and yummy cake !
Win/Win/Win !!! Mamaw would have been pleased that you made her recipe !
Thank you for sharing...stay safe and well...
In Pennsylvania where I am originally from we call this "Funeral Cake" The idea being you can make it and it can bake while you are getting your funeral clothes on and then you can take it to the family. The fact that you found it after your mother-in-law passed away is an interesting connection.
My honey’s grandmother gave this recipe to me when we married 50 years ago. She also gave me a recipe for applesauce cake. We usually just do a simple glaze on the cake and normally bake in a Bundt pan. Both recipes are delicious.
My maternal grandmother taught me how to make oatmeal cake!!!! She make one every week!
You make me feel old. I started making this cake in 1972 for my family. Everyone loved it, and it became a regular staple for many church functions and family occasions. Glad people are still enjoying it.
Your cake pan was the perfect addition to store it in...I think Mamaw is proud! Reminds me of a cake my grandma and mom used to make. I wish I had their recipes now. Will definitely be trying Mamaw's for the family this week. Thx for sharing a baking treasure with us!
Oh my,thanks for the slice:-)All I could think of was breakfast cake, haha, with fresh coffee,heaven:-)
God Bless
Donna
That cake looks absolutely delicious! Thanks Constance and Mamaw! I’m definitely going to try this with your glazed toasted coconut topping! Your Beebalm is beautiful! One of my favorite flowers!😘❤🙏🏻✨
I remember this cake in the 70’s I loved it!!!
My ex-husbands mom used to make that cake, it was wonderful, she used a German chocolate type topping but made it from scratch as well.
Yum, love oatmeal cake my mother used to make this cake at least once a month. The topping was my favorite, she would mix the coconut into the frosting ingredients and sometimes she would add chopped pecans. Thank you for sharing this recipe Constance and bringing back memories of my Mother! 🥰
I make this recipe to, but I don’t toast the coconut. I make the icing and add coconut to the pot right out of the bag and stir until combined, then I pour it on the cake while it’s hot. I love this cake and have made it many times.
We made this cake to take to the field during harvest meals. Still one of my favourites. We also did the topping under the broiler.
Ok, I had to try that cake of Mamaw’s! It came out great and tasted wonderful! Very moist and delicious! Tell Mr. Smith I’m right there as well with the coconut!😘❤🙏🏻✨
Bits of walnuts would be great too.❤
I love those bowls!!
My mom used to make an oatmeal cake that I adored. I cannot find the recipe anywhere in her things. I’m gonna try these one and see if it is like the one she made.
Well I think from all the comments this cake recipr is a winner so I am going to print this and make it too Thanks Constance for sharing
My mother made this cake. She made a topping with brown sugar, butter , cream, coconut and chopped pecans. She poured it on the hot cake and baked it until the topping browned slightly. It got crunchy and chewy.
It's good on chocolate cake too.
We are trying not to have dessert, but after watching this my husband said he's ready for his piece. He says he'll be right there!
Have same or similar recipe that have had about 50 yrs. Like others recipe calls for coconut topping.
Since I don’t like coconut, I used a homemade caramel icing using recipe I got from my aunt. Have not had it in years since, but May need to dig it out.
Good morning, that cake looked so delicious! I am definitely going to be putting that on my bucket list of recipes to make. Thank you for sharing your recipe and have a wonderful day!
Just add a scoop of vanilla ice cream and that would be perfect. Good Job!
I would do a thin layer of German chocolate cake icing! Delicious.
Yummy! That looks so good! Ice cream too needs to go with it!
Oh my goodness that looks and sounds so delicious.
It sounds like lazy days oatmeal cake, it makes the topping without premade mix
Beautiful cake!!! Thanks for sharing!
I just wanted to say that I am a new subscriber and I love your content, all of it! "Old home" cooking recipes, the best and this cake looks delicious!
Thank you, and welcome!
Looks yummy. Will have to make this for my husband.
Wow, that is a lot of sugar! Bet it tastes wonderful!
This cake reminds me of my Grandmommy. All the ingredients are already in the pantry. I’ll try this recipe. Thank you!
That looks delicious!
Oh that looks delicious 😋
My mom used to makebthis for me on my birthday, love it
Cake looks yummy.
That radio on the counter..... super cute, where'd you get that if I may ask.
Thank you! It is a radio, but also Bluetooth. I got it about 2 weeks ago at TJMaxx :)
Looks great. It made me think of my Mama (grandmother). She gave her daughters, DILs, and granddaughters a cookbook that an Aunt & Uncle helped put together for her. I just looked at the cookbook, and she has a similar recipe that she called Oatmeal Cake. Her toppings were butter, pet milk (evaporate milk), brown sugar, and coconut. Once that is mixed, you put on cake and put under broiler til it bubbles.
My most prized cookbook but it is wearing out.
My mom made my sister and I cookbooks with our childhood recipes a few years ago ❤️
YUM!!! Looks delicious!! I'm all about that delicious glaze!!! Wonder if poking holes halfway into the cake and allowing the glaze to seep down into the cake would make it too moist. Hmmm.... I see an experiment in my future - LOL!! 😋
Breakfast with a hot tea or coffee. Yum
Constance you are the most thoughtful wife. This cake sounds and looks incredible. It reminds me of a cake my great aunt used to make. Thank you so much for sharing with us. By the way did Mr Smith remember it 🤗💓💕💞
He says he didn’t, but he liked it anyways :)
@@CosmopolitanCornbread 🤗
That cake looks delicious. Did Mr. Smith remember the cake after he tasted it?
He says he doesn't remember her making it. It could be one that she had acquired after he had left home, which was a considerably long time ago :)
That looks so yummy except for the coconut lol..I bet a cinnamon crumb topping would be good too or simple powdered sugar glaze..thanks for sharing! By the way, did Mr.Smith recognize the taste?
He didn’t remember it, but he liked it nonetheless the less 😉
That hairstyle is so flattering to your sweet face.
Thank you :)
The butter wrappers, keep them in fridge? Thank you . Cake looks good.
If I have a lot of them, and put the extras in the fridge. But the ones I’ll use relatively soon, I keep in the cupboard. Cold butter doesn’t spread on pans :)
Thank you for the recipe. Did you use the convection setting?
I just used the regular bake setting :)
To me, that's a LOT of sugar. I'll use half that amount and more cinnamon. Thanks, Constance😊
My husband hated dried coconut! Says it reminds him of toenail clippings!
LOL
Gone carnivore! Can't have any of the stuff now!
I would do a thin layer of German chocolate cake icing! Delicious.
