I love the green dress you’re wearing. Did you make it? Ingredients are purchased, trying the recipe tomorrow!

Thank you, I did not. It is linen and came from Amazon. But it is kind of short, so I mainly wear it around the house, or working in the garden. I have it in a couple colors :) amzn.to/4dbWAU3

This looks delish! Two questions: could I use evaporated milk or heavy cream instead of coconut milk? and which would be better? Also, was that fresh spinach you just froze in a jar for later use without blanching etc. Interesting. I'm growing spinach and if I can preserve like that, I certainly will!

That was spinach from the store. After I had opened a bag, I put the rest in a jar to store in the freezer. That said, I have frozen fresh spinach simply by putting it straight in a freezer bag and pressing out all the air. I don't blanch it, and have never had issues.
I would recommend cream or milk instead of coconut, as the recipe has the starch to thicken it. You could also use cornstarch instead of arrowroot/tapioca if you are not avoiding grains :)

Looks good. Could you leave the spinach out or use something else? My family won't eat spinach.

Of course! You can just omit that. Maybe add some broccoli florets?
