  • Today we join Shinkichi Ito, the head chef of Saikan of the Dewa Sanzan Mountains during one of his excursions into the forest of Mt. Haguro to harvest wild mountain vegetables called sansai.
    Chef Ito is at the forefront of the preservation and continued innovation of Shojin Ryori, a spiritual cuisine developed by the yamabushi mountain monks of these sacred mountains.
