Sam, my son followed your recipe for carne asada . It was our all time favorite! He fixed it often, we never tired of it! My son passed away almost two years ago. He was our family grill master! I am going to give this receipe to my grand son a hopefully he will become our newest grill master. My son Nick followed you regularly and made full use of our grill. It never got too cold in Ohio for his grill!!!

Sam the cooking guy ..I wanted to share that I was in the hospital for 98 days I have been home since 9/1, I was in a coma for 30 days and when I woke up I couldn’t eat or drink for almost 8 weeks, I was being fed through my nose and iv and eventually a feeding tube. During that time all I watched was cooking shows and videos, it helped for some reason lol, that’s where I came across your channel. I just wanted to say thank you for your videos and personality. I love to cook and have made quite a few of your recipes. Keep up the great work, your videos helped me get through some tough times. They had the hospital locked down so no visitors. Hello Sam, I am a 53 year old chef according to my family but I tell you that every time I make something that you show and teach us how easy it truly is to cook with flavor and love, she says “ That is the best thing you have made.” I have tried different spices before but sometimes have used too much of it and then ruins it for a while. I use your measurements to a tee most times and it never goes wrong from the tequila lime shrimp and grits I made for her birthday to the most recent Carne Asada, the best thing ever. People that don’t know anything about food will criticize it, but I actually think it looks very good. People probably think is sweet but is just a little kick to balance all the flavors together. I’m from Monterrey Mexico and I can tell you that there’s thousands of carne asada recipes with different ingredients. Some people add vinegar, lemon juice, adobo, pineapple juice, beer, orange juice, jalapeños, cilantro, cumin, wine, chimichurri, black pepper, white pepper, bay leaves, oregano, mustard, brown sugar, garlic, cajun seasoning, olive oil, etc etc…
Soy sauce goes with just about all steak marinades. If you don’t like soy just get braggs liquid aminos. It taste the same just a healthier version. Give it a shot

Recipe never disappoints........Just whipped this up again last night with skirt steak. Absolute killer. Kicked the Brown Sugar, added Chili powder in place, hot fire. Chopped it up for burrito's.
I just watched this yesterday, it looked so good. So I went home but only had boneless chicken thighs and used the same recipe and put over the BBQ, it was the best chicken we ever had!
So finally did this exact marinade for my fam, got to say- amazing! Grew up making carne asada and this is the winner. No need to put beer, or a bunch of home sauces. Simple and amazing. The meat maintains its own flavor . This will now be my go to marinade for flank steak-

Having visited relatives down there all I've ever seen as anything resembling traditional carne asada consisted of whatever thinly cut of diesmillo or arrachera steak, lightly salted, grilled. Nothing fancy, no marinades, just plain steak. Same stuff in the mercados, on the street. Even in sit down restaurants, unless they offered something as a house specialty, a carne asada plate was just a simple, thinly cut steak, either bistec or sliced. I have never, in all my travels in Mexico, ever had carne asada that was marinaded or "preprada". In the US, yeah, we would get it if we wanted only because it was different but it's not the norm.
I agree. There's alot of stuff out there that are variations of the traditional stuff I grew up with that my Mom, Aunts, and Grandmothers would make. As long as it taste good, it's all good. I will say mention something else that made me laugh. Several years ago, Carl's Jr. advertised, what they were calling, a traditionally authentic California burrito. They showed the streets of Tijuana, and points south. I emailed their marketing team informing them that there was no such thing as an "authentic" California burrito and that saying this stupidity is insulting the intelligence of a lot of Southern Californians considering that many are very familiar with authentic Mexican food. While I never saw that commercial again I'm sure they received the same type of feedback from others.
I made this the first time with flat iron steak because we could never find good skirt or Flank steak. Tonight, I used beef tenderloin and it was SUPERB. The whole family thinks I'm amazing. 🤣🤣 I fessed up that it was Sam's recipe.

I made it and added Toreados chili peppers to the marinade! Served with cilantro lime rice and black beans. No words to describe how unbelievably delicious it was with layers of flavor!

Just curious, we found a different recipe for the marinade , this woman added Oregano in HER marinade . Have you ever heard of this? It doesn’t sound like it would be all that good with oregano. I made this exactly but without the brown sugar and it tastes AMAZING. 10/10 it works so good the flap meat and the charring was insane. It tastes exactly the carne asada my mother used to cook for me in my childhood.

When my oldest Son comes to town and me and him and his little Bro hang out, this is the exact recipe they want. We do it just like you show. The 3 of us go in the kitchen and make the marinade, then visit for 1-2 hours with it in the fridge, then fire up the grill. It is always amazing!!! As a side note, we eat it straight off the cutting board. (also like to add a bit more salt and pepper after the marinade.) Thanks Sam. My Sons think I'm a chef. Really, I just follow your recipe.
I'm Mexican from Mexico and I never seen this, but I understand recipes can vary according to the region where they're prepared, with that said I am willing to be open minded and give this a try, who knows I might be very surprised on a positive way.

Hi Sam, i heard from your Carne Asada Cup Noodles that you had gotten alot of sht from ppl on this vid due to soy sauce so i came back to say this to defend you from everyone hating on the soy sauce. My dad and my uncle are from central pacific Mexico and they used to own / Operate a Taco truck in northern California during the early 90's. I was a little kid then, but they would put soy sauce in ther carne asada and it was very popular taco truck. My uncle had suggested it to my dad , he had gotten the idea from another taquero friend of his in Baja. I would say innovation in the kitchen/cuisine or gastronomia is a very Mexican thing on its own, nevermind the people crying foul they dont know wtf theyre talking about. Mexicans evolve and we been putting soy sauce in our carne asada in my family for decades. Years before any fusion movement or the internet. Love your show my guy.

I was skeptical as well… being Mexican once i heard soy sauce I was out. But, I gave a shot, Pretty damn good my family thought it was really good. Personally I would rate it a strong 8.8 out of 10. It’s definitely one to try, non traditional but definitely goes good with some corn tortillas and a good guacamole. I would make it again. *side note if you’re like me and want a little kick I roasted some jalapeños on the grill and through those on the tacos. * Those are my 2 cents.
Soy sauce is very common in Mexican cooking. Many restaurants will have salsa de soya alongside all the other condiments and it is commonly used in marinades as well.
I have made this three times now and it is a no fail, awesome recipe. So easy, SOOOOO good. I have changed it just a tiny bit, here's my tried and true version: 1 bunch cilantro 4 cloves garlic 1 1/2 TB cumin 1tsp salt and pepper 1/2 C olive oil 1 1/2 TB dark brown sugar 2 limes, zested and juiced 3 TB soy sauce
Need to let you know that I've seen, re-viewed, and used this video to make the carne asada dozens of times now. Personally, I don't use the brown sugar, but otherwise, Sam, this recipe ya done did, is freaking wonderful. The carne asada it ALWAYS gets applause. Love it-love it-love-it.

Sam- You are Absolutely right on the marinade ingredients! My in-laws, from Holland, marinated meat for the Grill with Sweet Soy Sauce. You can find ABC Sweet Soy Sauce in the Asian section of lager supermarkets. Won't need the brown sugar, then, and marinated overnight gives the meat Incredible flavor! Hello Sam. I made this recipe yesterday and it was phenomenal! First one of yours I tried. All of you should try it. Very important to marinate 4 plus hours. Use thermometer. Cook to 139 degrees then pull off and wrap in foil. Cut and freeze what you don't use. I make tacos all the time now, thanks to Sam!
I made this twice already. You gotta try it. One of my favorites now. The flavor is amazing. I let mine marinade for 24 because it ended up raining. Worked out for the better

I'm making this right now for carne asada enchiladas. I added everything into my marinade with the addition of a splash of liquid smoke and a little msg. Smells amazing and I'm looking forward to cooking it up tomorrow.
Pretty good marinade brother, a little different from the barrio bar-b-q style the ways the homies do it, but I'd definitely try it. My step dad (Mexican) always made me drizzle a little lime/orange juice mix and a pinch of salt on the meat after the flip when he taught me to grill Carne. Kept the citrus zest from being boiled out of the meat. If the grill wasn't well seasoned or didn't get hot enough to char properly, he liked to cheat and add a drop of liquid smoke to that juice drizzle. He was fanatical about combining char/citrus flavor as being essential to his Carne method. Of course, he also thought that adding lime juice to any food was the panacea to all ailments and ills, so I took his advice with a grain of salt as well. He's been dead for years... : /
Catching up with this channel which I just found. Made this today and it is amazing!!!! So delicious and fresh tasting, which is very different than any steak I've ever had. Told a bowl of cut up pieces of the meat to my neighbors and they were blown away!!! Highly recommend.

Josue Martínez JM Music they’re not exactly the same, ranchera is beef loin flap in English, arrachera is beef skirt in English, a lot of places here in the states don’t have arrachera, but the butcher recommends beef loin flap aka ranchera, in Mexico you see a lot of arrachera at the carnicerías. I’ve noticed that ranchera is more porous than arrachera and it absorbs the marinade better, arrachera is a little more dense, they’re both good and similar enough that if you marinated both, most people would never be able to tell that they’re slightly different cuts of meat. I only buy if it says ranchera or beef loin flap, for tacos I’m a fan of diezmillo. People also use flank and brisket for carne asada grilling, but skirt and beef loin flap are best if you’re marinating, flank is a leaner choice.
So i use your recepy for my.wedding and this meat was the first thing to be gone. I use it at list once a year and always is the first meat to be gone and to be praised. Tomorrow is the first cookout of my new company and i just marinated meat with your recepy and i be cooking for my coworkers. Thanks!!

Add garlic butter to the cut meat after u salt it in its own juices. Also grill on high heat, 600 to 700 degrees over charcoal if u can. Superb recipe. We added cumin and smoked paprika to the marinade.
That is how it's done. I like how nothing was measured, if you have an hour let it sit an hour. If you have four hours, let it sit four hours. Cooking doesn't have to be prescriptive.

I agree. There's alot of stuff out there that are variations of the traditional stuff I grew up with that my Mom, Aunts, and Grandmothers would make. As long as it taste good, it's all good. I will say mention something else that made me laugh. Several years ago, Carl's Jr. advertised, what they were calling, a traditionally authentic California burrito. They showed the streets of Tijuana, and points south. I emailed their marketing team informing them that there was no such thing as an "authentic" California burrito and that saying this stupidity is insulting the intelligence of a lot of Southern Californians considering that many are very familiar with authentic Mexican food. While I never saw that commercial again I'm sure they received the same type of feedback from others.
I made this the first time with flat iron steak because we could never find good skirt or Flank steak. Tonight, I used beef tenderloin and it was SUPERB. The whole family thinks I'm amazing. 🤣🤣 I fessed up that it was Sam's recipe.

The marinade I use is garlic, beer (MGD) orange juice and spices. Refrigerate for four hours then grill.
So no brown sugar or is the orange juice the replacement
I made it and added Toreados chili peppers to the marinade! Served with cilantro lime rice and black beans. No words to describe how unbelievably delicious it was with layers of flavor!

When my oldest Son comes to town and me and him and his little Bro hang out, this is the exact recipe they want. We do it just like you show. The 3 of us go in the kitchen and make the marinade, then visit for 1-2 hours with it in the fridge, then fire up the grill. It is always amazing!!! As a side note, we eat it straight off the cutting board. (also like to add a bit more salt and pepper after the marinade.) Thanks Sam. My Sons think I'm a chef. Really, I just follow your recipe.

Hi Sam, i heard from your Carne Asada Cup Noodles that you had gotten alot of sht from ppl on this vid due to soy sauce so i came back to say this to defend you from everyone hating on the soy sauce. My dad and my uncle are from central pacific Mexico and they used to own / Operate a Taco truck in northern California during the early 90's. I was a little kid then, but they would put soy sauce in ther carne asada and it was very popular taco truck. My uncle had suggested it to my dad , he had gotten the idea from another taquero friend of his in Baja. I would say innovation in the kitchen/cuisine or gastronomia is a very Mexican thing on its own, nevermind the people crying foul they dont know wtf theyre talking about. Mexicans evolve and we been putting soy sauce in our carne asada in my family for decades. Years before any fusion movement or the internet. Love your show my guy.

I was skeptical as well… being Mexican once i heard soy sauce I was out. But, I gave a shot, Pretty damn good my family thought it was really good. Personally I would rate it a strong 8.8 out of 10. It’s definitely one to try, non traditional but definitely goes good with some corn tortillas and a good guacamole. I would make it again.
*side note if you’re like me and want a little kick I roasted some jalapeños on the grill and through those on the tacos. *

Soy sauce is very common in Mexican cooking. Many restaurants will have salsa de soya alongside all the other condiments and it is commonly used in marinades as well.

I have made this three times now and it is a no fail, awesome recipe. So easy, SOOOOO good. I have changed it just a tiny bit, here's my tried and true version:
1 bunch cilantro
4 cloves garlic
1 1/2 TB cumin
1tsp salt and pepper
1/2 C olive oil
1 1/2 TB dark brown sugar
2 limes, zested and juiced
3 TB soy sauce

You are Absolutely right on the marinade ingredients! My in-laws, from Holland, marinated meat for the Grill with Sweet Soy Sauce. You can find ABC Sweet Soy Sauce in the Asian section of lager supermarkets. Won't need the brown sugar, then, and marinated overnight gives the meat Incredible flavor! Hello Sam. I made this recipe yesterday and it was phenomenal! First one of yours I tried. All of you should try it. Very important to marinate 4 plus hours. Use thermometer. Cook to 139 degrees then pull off and wrap in foil. Cut and freeze what you don't use. I make tacos all the time now, thanks to Sam!

My step dad (Mexican) always made me drizzle a little lime/orange juice mix and a pinch of salt on the meat after the flip when he taught me to grill Carne. Kept the citrus zest from being boiled out of the meat.
If the grill wasn't well seasoned or didn't get hot enough to char properly, he liked to cheat and add a drop of liquid smoke to that juice drizzle. He was fanatical about combining char/citrus flavor as being essential to his Carne method.
Of course, he also thought that adding lime juice to any food was the panacea to all ailments and ills, so I took his advice with a grain of salt as well. He's been dead for years... : /

Catching up with this channel which I just found. Made this today and it is amazing!!!! So delicious and fresh tasting, which is very different than any steak I've ever had. Told a bowl of cut up pieces of the meat to my neighbors and they were blown away!!! Highly recommend.

Josue Martínez JM Music they’re not exactly the same, ranchera is beef loin flap in English, arrachera is beef skirt in English, a lot of places here in the states don’t have arrachera, but the butcher recommends beef loin flap aka ranchera, in Mexico you see a lot of arrachera at the carnicerías. I’ve noticed that ranchera is more porous than arrachera and it absorbs the marinade better, arrachera is a little more dense, they’re both good and similar enough that if you marinated both, most people would never be able to tell that they’re slightly different cuts of meat. I only buy if it says ranchera or beef loin flap, for tacos I’m a fan of diezmillo. People also use flank and brisket for carne asada grilling, but skirt and beef loin flap are best if you’re marinating, flank is a leaner choice.

Add garlic butter to the cut meat after u salt it in its own juices. Also grill on high heat, 600 to 700 degrees over charcoal if u can. Superb recipe. We added cumin and smoked paprika to the marinade.

That is how it's done. I like how nothing was measured, if you have an hour let it sit an hour. If you have four hours, let it sit four hours. Cooking doesn't have to be prescriptive.
