Ingredients
For the Flavor Oil
2 oz ginger slices
12 cloves garlic, crushed
1 onion, peels on, cut into quarters
2 tbsp sichuan peppercorns
1 bay leaf
3 cups neutral oil (I like to use avocado oil. You can also use vegetable, canola, grape seed or peanut oil)
1/2 cup chili flakes (I use Thai chili flakes for extra spicy, you can use regular red pepper flakes) amzn.to/2uiP1Lk
For the Chili Oil
3 tbsp neutral oil
1/2 large onion, chopped
3 tbsp soy sauce
3 tbsp toban djan, Chinese chili bean paste amzn.to/2UmIWbc
1/2 cup chili flakes (I use Thai chili flakes for extra spicy, you can use regular red pepper flakes)
2 tbsp gochugaru, optional amzn.to/2W44kCT
2 tbsp fermented black beans, optional amzn.to/3A2PkqS
2 tbsp sugar
1/2 tsp msg or mushroom powder
A pinch of salt

I commented below when I made this recipe, my whole family loves it and I just want you to know that we are three quarters through the whole batch in less than two weeks.:) It is crazy good on dumplings. We enjoyed it through Chinese New Year in hot pot and as a dipping sauce. I also used it to spice up my usual stir fry recipes. I am headed to the store for more ingredients this week!
Update: I just woke my 13 yo daughter and made her spicy hash browns with this oil! Grate 2-3 potatoes, rinse 2-3 times. Add a grated onion. Squeeze all hard in a tea towel. Stir in a tablespoon of the chili base and then fry them in the chili oil. I used avocado oil for my version.:) crazy good!
Absolutely delicious! So much so, that there was no way I was going to just toss all the onion peppers and garlic left from frying, so I added about 6 cups of water, some vegetable bullion , and let it simmer for about 20 minutes. It was fabulous and I used some to make a version of your Fun soup! Thank you!. 😁
This is the best chili oil I’ve ever had & made and my mom and I went through this is in about a month we put this on everything it tastes really good on eggs as well I have to make some more this weekend 😩

I cannot wait to replicate this wonderful chilli oil you created. I have got all ingredients but i cannot find toban djan anywhere in my city in Pakistan. Usually it's available but not these days. Instead of Lee Kum Kee's toban Djan, can i substitute this with Lee Kum Kee's chilli garlic sauce? I have to create this soon so if you can respond I'll be highly grateful to you 😭😭

Its an amazing recipe, but I can't emphasize enough how much the flavor develops with time. I would honestly recommend making more and letting one jar sit a while, because imo the flavor keeps getting better and more complex even after 1+ month. Apart from that, I have to say that this is by far the best chili oil I've ever had. Thank you so much for the recipe ❤️

Brilliant!! I have wanted to know how to make this for decades. I first learned about it when having dim sum in Chinatown with my dad and since then have often requested it at other Asian style restaurants. I do love it on rice and wide noodles too as well as adding it to many other dishes. Thank you so much for showing us how to make this oil, it’s definitely one of my favorite Asian condiments.
