2 bunches of cilantro
4 stalks green onions
pink Himalayan salt
½ cup EVOO
3 Tbs apple cider vinegar
6 whole cloves
1 seeded Scotch bonnet peppers
3 Tbs lime juice (concentrate)
1 cup whole garlic
5 Bell peppers (two yellow, two red, one green)
1 Red onion
2 chicken Bouillon Cubes

Epis is close to sofrito except we use culantro and sweet peppers instead of hot ones. All Caribbeans cook with a variation of this goodness. African influences made our food super delicious!

The flavor
I am wondering if i can use Osem consumme instead of maggi. I think tomorrow I'll make a vegetarian version for myself on the side to cook rice in, with broth, and marinate a lot of meat for the BBQ for everyone else. I'm so excited to prepare this tomorrow. Thank you so much for taking the time and effort to share this.
I tried scotch bonnet for the first time this year, and it has made me fall in love with spice and with peppers. I agree, it can be too much, but there is a flavor to the pepper that is so endearing it makes me want to cry (happy) when my husband cooks me a certain kind of rice that contains it.
I used this and my husband bought ribs instead of chicken but everybody still liked it!! ❤ thanks for sharing ❤

I’m curious. Can this be made without the scotch bonnet pepper? Also is it necessary for the salt since the bouillon is already salty in itself?
Yes and no. I make mine w/o salt because of the bouillon.
Yes, you do not have to add the scotch bonnet. Also, no added salt is needed as you will add the Maggie and typically add salt when cooking your food.

About a week. You can def freeze them into ice cubes and put them in a ziplock bag.

how long did you baked the chicken for at 375 degrees?
Until it was brown on both sides. Around an hour and a half but it really depends on how big your pan is and how big your chicken pieces is.

You can try it. It’s more of a marinade and cooking sauce though but why not 💛

Like a couple weeks in a mason jar. Freeze some into ice cubes and use as you need

Another J Name. You cook it in rice, beans meats, sauces etc. It is like a paste. Very popular in Haitian cooking. I am not Haitian, but was married to one for years. Very flavorful.

It is NOT spicy and you don't have to use the scotch bonnet if you don't want to, but even with it seeded it is not spicy. It is a pasty seasoning. I love it.
