Easy Sauteed Turnip Greens

  • Here's a REALLY easy, fast, and delicious way to cook turnip greens (without added meat). The recipe can easily be tailored to your needs...oil or no oil, salt or no salt. It's up to you! Try it sometime!

    Easy Sautéed Turnip Greens
    Makes 4 Servings
    1 Tbsp extra virgin olive oil (or 2-3 Tbsp water or vegetable stock)
    ½ cup chopped yellow onion
    3 large cloves garlic, chopped
    1 bunch turnip greens
    Water or vegetable stock, as needed
    Salt and pepper to taste
    Juice of ½ to 1 lemon or lime (or 1 Tbsp vinegar of choice)
    Wash and drain the turnip greens, but do not dry or spin them. Coarsely chop the greens; removing the stems is optional. Set aside.
    Heat a large pot over medium heat. Add the oil (or water or stock, if preferred). Sauté the chopped onion for about 1 minute, until it starts to soften. Add the garlic and sauté for 1 minute more, until the garlic starts to soften. Add the prepared turnip greens, and salt and pepper to taste. Raise the heat to medium-high if needed to keep the vegetables cooking. Sauté for about 5 minutes, or until the greens are wilted and as tender as you like. If needed, add a small amount of liquid (water or stock) at a time to the pan to keep the vegetables from getting too dry as they cook. Turn off the heat and stir in the citrus juice or vinegar, using as much or as little as desired. Serve.

    I diced a tomato and sauteed it along with the greens, and it made a great substitute for citrus juice.

    In South India we cook this with some lentils and put some freshly grated coconut on top at the end

    I tried your recipe a few times, really easy, healthy, and yummy! I also modified once, and added ground meat processed with my favorite Bangladeshi spices

    Hi Judi, I like how you included the stem of the leaf. I always cook every part of a green. It makes the dish more interesting, tastefully and visually, and I don’t feel like I could be wasting the best part. Thanks for a great easy-to-follow video!

      Hi Maeve! Thanks for watching and sharing your insight! I agree...I see no reason to remove the stem when it adds a little texture to the dish! It's perfectly edible, so why toss it out?? I always eat the whole thing, but in some ways I actually prefer the stems! Thanks again for sharing. Take care :)

    Like you said, allium and lemon juice is all you need. They cook very fast. I don't like to cook them past the stage where the green color turns toward brown.

    I made turnip greens and beans the other night and they were so bitter I threw them away. I don't like wasting food, but they were so bitter and horrible tasting.

      Hi Cyndi! I'm sorry you decided to toss the turnip greens! There are "tried and true" ways to remove the bitter flavor from greens, like drizzling them with a little lemon or lime juice, or vinegar of choice at the end of cooking time. It doesn't take much to do the job. I do this ALL the time...literally ANY time I cook greens of any type. Please take a little time to check out my video on this subject.       Pick your greens earlier. They get bitter from bad/stressed growing conditions or being mature. Pick younger greens
