Quang Tran try making kilt lettuce and onions with tenderloin/ pork chops, fried potatoes, soup beans, mac n cheese and corn bread one day ... it’s a deep south southern meal and my favorite of all time! The world needs to know about it!

Growing up, I always had problems eating it wrapped with the lettuce and herbs, then I went to someone's house and saw them wrap it in rice and paper and was like, "Why did I never think of that?" So now that's how I eat my Vietnamese fried spring rolls as well (we don't eat the fried spring rolls on their own, but wrapped).
You shouldn't call them pancakes because they are thin, more like crepes. Call them sizzling crepes if you're gonna convert it to English. That leafy vegetable is chrysanthemum leaves (not the kind grown in your pots in the fall, but a vegetable chrysanthemum). You did a great job on getting that crunch, though! :)
It's always eaten with some green vegetable like lettuce or mustard greens (?) and lots of herbs. That's very typical Vietnamese to eat like that. It's how we eat our fried spring rolls, too, as we just don't eat the fried spring rolls by themselves like in West.
I don't understand how Vietnamese people are so skinny when they eat the best food! I love Vietnamese cuisine. It is simply the best of all Asian cuisine. I say that as an Asian person. I must live with a Vietnamese family to find out for myself this phenomenon.
