In Germany, German Shepherds are still used for herding sheep. They look a lot like the original German Shepherds back when the breed was created, nothing like modern show lines. They don't just herd, they also protect livestock fiercely. I once went hiking and stumbled upon two old-type German Shepherds working with a herd of sheep, they were not happy about me getting too close and "told" me in no uncertain terms to back off, or else! P.S. The traditional German way of herding you described is still very much alive!

This helped me to understand the shepherd I had when my daughter was a toddler. She amazed me one day when she started keeping the toddler in the driveway all on her own. She was following her nature. She had been out with us as I let the toddler play. I always dashed to stop the child when she would start to leave the driveway. My dog understood from my behavior and started doing what she naturally saw as her job. I didn't want the child to get into the horrible devil's club plant sprouts that would come up in our clearing. We lived in the WA rain forest at the time. Many years later after I learned a little about commands I had a cardigan corgi who worked with me to herd our 2 cats when they snuck out of the house. She learned come bye, come away and get'em. The last was when she pinned one and held it until I could run pick the cat up. Then we would go after other when the first was put in the house.
I have never seen a German Shepherd actually herd sheep! That is so awesome. And the footage was beautiful. If you could also make an episode about the Belgian Shepherd Tervuren, I would be so happy ❤
I'd love to train my shepherd with these people. I always wanted to try herding but was never lucky enough to find a sheep farmer/trainer in my area. I had a Border Collie that worked the sheep, when I got a GSD that BC couldn't understand why she didn't work the same way as she did!
