      Fredrik Fossaa I think he just misspoke and meant tablespoon. What he did in the pan was approx. 1 tablespoon, it was barely enough to coat even 1/3 of the pan. Besides, it's not baking, if you add a bit more or less of something you don't ruin the dish, with lemon zest/juice you have to add A LOT to ruin the taste, not to mention that Brussel sprouts basically are little pockets of fart without seasoning, which compensates for the freshness of lemon I guess.

    This is even better when you grow the sprouts yourself. They're actually pretty low maintenance and very hardy. We grow them this year and had them with thanksgiving dinner

    I stir fry these sprouts with oyster sauce and garlic. Taste yummy like the oriental way.

    As a lot of other teenagers, I used to dislike Brussels sprouts. After several years I started to like them more and more and I really am looking forward to cooking this, thank you so much for sharing it Gordon!

    I've just now seen this video, but actually happened to make a dish very much like this for Thanksgiving yesterday (although I had shallots in mine instead of chestnuts, and cooked them in the pan from raw instead of blanching them). really delicious dish

    I made these last Christmas and I'm doing the same this year, amazing flavour and take your time to go and find panchetta, it's out of this world,, best Christmas lunch I ever had, followed chef ramsay recipe for sprouts, turkey, stuffing and roast 🥔, 🦃🍅🌶️🍠🥕😜🍟🥑🍞🥗 You really are a legend when it comes to food chef

      Jesusismyking - it's much easier to overcook them than undercook. Don't cook them for a second longer than Gordon suggests, especially when blanching them in the water. You cold probably get away with a minute instead of two in the water

    Absolutely delicious-and I've never been fond of brussels sprouts. But definitely go with the pancetta. I tried it with smoky bacon and it was just ok. What a difference the flavorful pancetta made. I couldn't find chestnuts but it was still delicious. Looking forward to making it at Thanksgiving/Christmas with the chestnuts!

      Remember, by the time he cooks (Sweats) that off, the salt accumulation will decay, so given it that extra seasoning of salt, ensures is stays there by the time its finally finished off.

      It's for 2 reasons (I would assume):
      1) Extra salt helps the pancetta shed the fat faster (due to pulling out the moisture)
      2) The salt is also seasoning the sprouts and chestnuts.

      JeebusCripes21 I think #2 is the main reason. Brussel Sprouts need a lot of help. I doubt he'd add salt if he was making the pancetta on its own.

      I fry shredded sprouts up and fry them in butter, chopped onion, bacon and a little lemon juice. Season with salt and pepper.. amazing

    2:02 "really important you don't put the chestnuts in too early" - how early is too early? 5am? Before you've had a drink? These clips are useless Gordon unless you give us hard facts like timings, I don't blame you, I blame your editors for making this into a 3 min clip when clearly it takes a bit longer but not much, it's just I'm doing this tomorrow and I'll have started drinking at 11 ah sod it I'm just going to go for it with those conkers I collected last month.

      The pan is not burned. That's the bacon fat that got stucked. He's not using a non-sticky pan so it's just normal that happens.

      Danilo Riffo is in part right, but when you buy the Ultimate Cookery course you receive a recipe book that contains all the instructions and rations for the dishes in the course.

      yup, but as all non-pastry recipes they're general guides with approximate measurements. When they say "a big turkey" for some that will mean a 2Kg turkey but for others it will mean a 5Kg one. Even "low/medium/high heat" on a stove can be different depending on the stove used. The technique is the key. You always have to adapt it to your specific situation.

      Danilo Riffo I know, but what I'm saying is, when you buy the course, they give you the recipe, with the exact measurements. The question was "how many dishes and items he uses?" and the answer is, it is on the recipe book they give you when you buy the course. See my point?

      They're sweet, mild and smoky if they're roasted. Texturally, they're similar to water chestnuts, except they're not disgustingly hard or crunchy like water chestnuts (I'm absurdly picky about textures). They're delicious, (especially candied as marrons glaces) and a traditional fall-winter or Christmas treat. If you live in a city in the US with hot dog carts (NY, Chicago), you can probably find a dude selling roasted chestnuts on the street too. And in nearly every city in Europe they are sold, especially in London, France and Northern Italy.

    Sorry Ramsey. But anyone who thinks brussel sprouts are delicious has terrible taste in food. My respect for you has gone down. Unless these are so good they are nothing like what I've had. I doubt you can change the vile taste that much.

      It's pancetta. It is safe to eat that way - it's not technically raw.
