After how many years of watching your channel, I am still learning something new every video. Thank you so much for taking the time to make these videos. I was re-watching the Gai Yang videos and I can't believe it's been that many years. Awesome young lady!! Keep them coming!
I made this a few nights ago! I was able to get a fish head and that added tons of flavor to my soup. The head has a lot of tender meat. I had used fresh catfish filets and added some of my favorite stewing vegetables in addition to yours. This recipe is definitely a winner and now my favorite way to eat tom yum 🐟🌶😋
Hi Pailin, thank you so much for the recipe I cooked this dish last week & I must say it taste so good just like having a meal in an authentic Thai Restaurant. Love it❤️😘😋
Thanks for sharing this recipe. I had Tom Yum Soup with Shrimp, and also with Boiled fish and Fish balls, it was pleasantly delicious, both versions. I am looking forward to cooking this myself. Thanks.
After my first visit to Thailand in 2006, i cannot live without tom yum in my life:) I have it with any seafood or just mushrooms or just random veggies:) Its all about the tom yum broth... soooooo good
i use chicken stock for a more rounded and subtle flavour, also i use large yellow onion if i don't have access to shallots, and of course lots of lime juice... yum.
Hey cHemon - and yes we're a little surprised ourselves from the bad rap that Tilapia is getting, and that might be because we are in Canada where the issues that seem to surround it are a bit of a non-issue (our fish farms are different for instance from those in China). Great article here from Univ. of Calif. Berkeley on how the details and how some of the "tilapia is bad" stories got started www.berkeleywellness.com/healthy-eating/food/food-safety/article/truth-about-tilapia
Thankyou for this video. I have had fish broth, boiled head and bones, frozen for a while now and was just given some fresh galangal. In searching on how to use galangal I have found you and this particular video. I grow my own chillis and suspect i will have some scary tom yums, thankyou :)
Wow!! I was scrolling and I stumble upon this..I had tasted this kind of soup before back in Jacksonville NC. I'm so glad I viewed ur vids,I'm going to the market tomorrow anyway and pick up some ingredients to make chicken laarb and tom yum...thanks for this video !!!!
Fish heads, fish heads Roly poly fish heads Fish heads, fish heads Eat them up, yum In the morning, laughing happy fish heads In the evening, floating in the soup
Damn, it's sooo teasing!))) I'm a huge fish fan and a sports fan and it's a perfect dish for me, thank you so much! I want is sooo bad, but I'm not sure, that I'll find all the ingredients hier in Germany...However, I've just looked up...I can order galangal by Amazon and even fresh))))
you can, but the flavor is truly not as fragrant. i wouldn't worry too much about the galangal, you can completely omit it-some of the most traditional tom yums do not have galangal (this is not to say that I do not like galangal, i love it so much that i always keep it fresh in my fridge).
Looks like a really tasty and simple recipe. I really like how you simplify all these cooking and give great tips. I am going to try it for sure. Lots of love and Take Care Pai. 🤗😊☺🤗
Mmm, I have not made salmon head tom yum in a long while. Americanized people I live with always complain that the house "stinks" after. I always put rice in all of my clear Asian soups too! Unrelated to this, but I also miss Kapi 😋
Cameron Alexander everything is edible in the fish head (besides the bones of course). it's mainly about checking how fresh the fish head is (i.e. gills must be bright red and eyes clear)
cHemon If we try to not think of them as eye balls (closing our own eyes while eating) then they are quite tasty! I used to refuse to eat eye balls too until I accidentally ate some one day and found out how much I had missed out on.
Hi Pai! wondering if you ever tried freezing Thai Basil? I love too far from Asian grocery stores so I don't just drive extra miles just to get one item. I love Thai Basil a lot in my cooking but sometimes it goes bad before I even have a chance to use in my cooking. Any tips on how I should freeze it?
Consider keeping the stems of herbs in a cup of water in the fridge or try the ziplock and straw method (look it up on youtube). I've frozen extra italian basil before by throwing all the basil in a small food processor or blender and making a paste and freezing that.
Hi Pai can you plz tell me where I can find cilantro roots in Vancouver? I have been to many Vietnamese and Chinese grocery stores and none of them carry the roots. Thank you, I love your videos.
Thai food is so fucking good. I had to stop cooking French/Italian food all the time because it was fattening for me. I can use Pai's and Maangchi's recipe's as my go-to's pretty regularly now because they are so delicious but also healthy.

Tom Yam with fried tofu is delicious, too. I use the lemon grass fried tofu and brown rice to make it a meal, with seconds!
After my first visit to Thailand in 2006, i cannot live without tom yum in my life:) I have it with any seafood or just mushrooms or just random veggies:) Its all about the tom yum broth... soooooo good

I don't understand why so many people are hating on tilapia. For me it's very good and affordable. Maybe I'm not too picky.

Hey Pai.... this was the bomb soup! it kind of taste like singagang(filipino dish) but the smell is different but soooo wonderful! Thank You!❤️
I love the shirt!
My dear Pailin can you please please tell me if i can use dried galangal ?? And how? Do i have to soak it? Same with the lime leaves can use them dry?
you can, but the flavor is truly not as fragrant. i wouldn't worry too much about the galangal, you can completely omit it-some of the most traditional tom yums do not have galangal (this is not to say that I do not like galangal, i love it so much that i always keep it fresh in my fridge).
Ohmigosh! Drooling here! This is similar to filipino sinigang. And I do eat mine with the rice in the soup, too. So yummy & healthy.
Just had this at a local restaurant! It was amazing though they kinda battered and deepfried the fish before adding it to the soup...
hi Pai... this looks like fish sinigang..😁im going to try this tho..
Looks like a really tasty and simple recipe. I really like how you simplify all these cooking and give great tips. I am going to try it for sure. Lots of love and Take Care Pai. 🤗😊☺🤗

What is edible and inedible in a fish head? I want to make stock using one but I'm a little apprehensive.
Cameron Alexander everything is edible in the fish head (besides the bones of course). it's mainly about checking how fresh the fish head is (i.e. gills must be bright red and eyes clear)
Cameron Alexander
I love fish head and I can eat everything except the eye balls. Many people love eating eye balls though. :)
cHemon If we try to not think of them as eye balls (closing our own eyes while eating) then they are quite tasty! I used to refuse to eat eye balls too until I accidentally ate some one day and found out how much I had missed out on.
I love fish head too. Just be brave and after it's cooked and you start poking around, it's easy to see what's edible.

I love Thai Basil a lot in my cooking but sometimes it goes bad before I even have a chance to use in my cooking. Any tips on how I should freeze it?
If you have my book I talk about how to do it in detail in there. But basically you have to quickly blanch it before freezing.
Consider keeping the stems of herbs in a cup of water in the fridge or try the ziplock and straw method (look it up on youtube). I've frozen extra italian basil before by throwing all the basil in a small food processor or blender and making a paste and freezing that.
Thin Thin Rodgers I chopped them up and filled in ice scoop tray then covered up with water. It's stay green forever.
Hi Pai can you plz tell me where I can find cilantro roots in Vancouver? I have been to many Vietnamese and Chinese grocery stores and none of them carry the roots. Thank you, I love your videos.
The only place I know that carries it is Asia Market, and it's not always there..so hit and miss really.

I thought I just saw a video a couple of days ago!
