    Ingredients:
    * 1 1/2 to 2 cups Arborio rice (risotto rice)
    * 1 onion, finely chopped
    * 2 cloves garlic, minced
    * 1 celery stalk, finely chopped
    * 1 carrot, finely chopped
    * 200g (about 7 oz) mushrooms, sliced (you can use any variety you like)
    * 4 1/2 to 6 cups vegetable stock
    * 2 tablespoons olive oil
    * 1 tablespoon fresh thyme leaves
    * Salt and pepper to taste
    * Fresh or dried thyme
    * Grated Parmesan cheese (optional, for serving)
