    Heey so I am a small baker myself. I run a small online based bakery. I have a brownie fudge cookie recipe of my own. It also turns out looking exactly like this! Nice crinkle on top and fudgie on the inside. But for the last few days I was failing to achieve that beautiful crinkle on top and I couldn’t figure out what I was doing wrong. Today after watching your video I realised that I am rushing more these days so I am adding the hot butter to the mix! Ah so relieved. Hopefully the next batch of cookies will be crinkly!     Since I have a small oven, I had to bake my cookies in 2 batches and it wasn’t as good and flowy as 1st batch so try not to.

    hiya there, i've been making your recipe twice (the texture is AMAZING! THANKS!) already but i couldn't seem to get that cracked surface on the cookies. My oven is over the stove type, and I discovered that the lowest shelf closer to fire will produce a pan of cookie batch that is taller/bulkier that those on the second or third shelves. would appreciate any feedback. thank you!

    These are AMAZING and hands down the best i've ever tasted. Used 75% dark and increased the sugar by 2-3gms to compensate and it was perfect! Mine didn't look the ones you have on your thumbnails but maybe that was achieved by flattening/shaping the dough a bit?
    Would also like to know if you would approve of a hint of chopped walnuts / pretzel pieces going in to add another layer personally? Or do you recommend / prefer em plain?

    Hi, i tried and turned really good. Tku for sharing this recipe. Btw, i put half in the fridge since waiting the other batch to bake but the other batch after fridge doesnt look shiny anymore. is it possible i put 2 batch in the same oven? or gonna mess they way it cook? Tks

    just tried this and one full scoop of batter was too big for me (im gonna half it next time) but the crackle came out ah-ma-zing !! and the chocolatey flavour is to die for !!! definitely recommending this recipe and channel to friends and family ;)))

    I’m a terrible baker, but I made these & they were amazing!!! I had to add more flour because my conversion chart may be incorrect. I’ll weigh the ingredients next time.

      Ah I know what you mean, especially with the high chocolate content / low flour ratio. I really had to let mine sit and firm up for a good few minutes. I found these ''soft caramels'' by Werther's Originals at Ocado which worked brilliantly. They stayed lovely and soft even after completely cooling and didn't disturb the texture of the cookie so definitely give those a try. Used Guittard chocolate in my bake upon your recommendation and was not disappointed, truly delicious. Just ordered a bunch more 🙈

    I don't really do comment but OMG! Just tasting the first bite - obviously couldn't wait 30 minutes..- this is the best chocolate cookie recipe, I've ever tried. Do you have like any idea how to keep the second tray "as shiny and cracked" as the first one? :/

    hi! so i made these cookies a couple of times and they’re AMAZING! and when i bake them, they’re usually in separate batches because i can’t fit all of them in one tray :p but by the time i go on to do the second batch, the dough have already lost its consistency and comes out tasting and looking differently. any tips on how to prevent this????

    What about warmer tropical very humid climates, does the 5 minute cooling time still apply? or is there a way to tell like the chocolate mixture feels warm but not hot to the touch. Ta!

      i tried the recipe in Singapore, the temperature was around 35 degrees Celsius, and I can say that the cookies didn't spread right so I'm guessing the 5minute needs to be adjusted. is it possible to tell us the exact temperature the chocolate needs to be at?

      KAT win no very important you don’t chill it, you need to stick to the method as shown in the video otherwise the cookies won’t spread and crack or have that glossy finish :)

    I made these cookies using your recipe. However, I used dark brown sugar. I didn’t get the same dough/batter consistency. Plus, my cookies didn’t look right - the cracks were very tiny rather than larger deeper cracks and it thinned on the sides. @theboywhobakes please help, would love your input.

    Hello! If a make half the recipe, should I beat the eggs and sugar for 5 minutes as well? I made those yesterday and it came with to shiny crust :( also it spread way more than yours in the oven. I didn't use parchment paper, just dusted a baking sheet witih flour and butter. And used a 60% chocolate. maybe the oven temperature was not right? (my gf oven is not very good). I followed the other timings and things exaclty.

    I wanted to know of how many grams for the two large eggs? Sizes might vary from countries so if I used eggs (large sizes according to my country and might differ with yours) would it affect the recipe?

      Mizu chan you're doing the right thing, just weigh the eggs. He's mentioning grams instead of size just for that reason. A medium egg can be different in size from country to country

    I just tried making them and my batter wasn’t as glossy as yours in the video. I tried to add the melted chocolate right at the 5 min mark but may have been 30-45 sec late. Plus my batter seemed a little thicker. Did I overmix it?

    Does anyone know what size scoop should be used? I used what looked like the same size that Edd used, however, the cookies are very large, and only made 7, instead of 10 as he mentioned.     Hi Edd: I have two questions if you don't mind. How should I store Malden sea salt if I don't use it often? What size scoop do you use for the cookies?       Store any salt in an airtight glass container so damp can't get into it. Glass won't react with the salt.

      Anna Bookout they’re half sheet (I’m using a 2 oz cookie scoop) but they’re not super thick and don’t feel overt indulgent, just the right amount ;)

      That would be delicious! The salt is there to balance out the sweetness and give some oomph to the chocolate

    The bottom of my cookies were a little burnt. I put them in at 180 for exactly 12mins on the middle rack. What can I do to prevent this from happening in the future?

      Unfortunately many people have tried this without eggs and no one has made a good version, I don’t think it’ll work well without them sorry

    Hi, made this cookies and pains me to tell you, I was not able to get the crackle top AT ALL!! So sad. Do you have any idea about what was the problem?
    I am a pretty decent baker and I followed the recipe to the T. No idea what when wrong.

      TerminalNick it’s very hard to know what went wrong without knowing more detail. But from other people’s past problem, the likely issue is temperature or time. If the chocolate mixture is too hot when added to the eggs it makes it set prematurely and prevents cracking. The same is true if the batter isn’t scooped and baked immediately after making

    Tried this recipe, but mine didn’t have that crinkle & shiny top. What could be the reason? Is it bcs I reduced the white granulated sugar to 75 g instead of using 150 g? I also use 85% dark chocolate

      The sugar is important for the shiny top when whisking with the eggs so that might be the reason

    There was no crackling on my cookies. Smooth and shiny melted chocolate butter mixture, ticked. ribbon stage egg mixture, ticked. Please kindly suggest what I possibly did wrong...

      Without seeing the cookies it’s hard to know but my guess was either the leavener wasn’t added or something with the mixing was off (either the chocolate mixture was added whilst too hot setting the dough too quickly, or the cookie dough was left to sit too long before being baked, it could also be down to the chocolate used)

      I used 85% chocolate bar. The melted chocolate wasn’t hot as I was afraid it would cook the eggs and I did add baking powder. The cookies were baked right after I finished scooping. Or should I use chocolate chips instead? : /

      Use Aquafaba instead of eggs. Or just accept that not everything can be made vegan.

      No compound chocolate should never be used in my opinion, it’s just cocoa powder and oil, it will throw off the taste texture and look of any recipe that calls for chocolate

    hai, i’ve tried this recipe. the first batch was okay, but when i baked the second bath the cookies came out really flat n the surface is not flaky anymore. why is that ? 😅 n i did cover the batter while the first one are baked

      Nadhirah Razak it’s hard to know without knowing exactly how you made the batch but be likely culprits are that the chocolate mixture became way too cool when mixed with the egg (this would explain them being flat) also the batter doesn’t really like sitting, it’s best if you can bake them on two trays at the same time. Hope that helps :)

      i guess the chocolate because the batter does turned stiffer when i’ve finished baking the first tray. but i can’t fit the whole batter into two trays, is there any other way so that the batter wouldnt end up too stiff in time?

      Dhania Sorfina Heyerdahl these are not crisp on the outside they’re like a tender brownie rather than a traditional cookie
