I made this yesterday and it is absolutely delicious! Thanks so much for this recipe! I added a teaspoon of coconut extract to the pudding and a teaspoon to the whipped cream and the taste is magnificent. This is definitely something that I’ll be making and taking to holidays and social events. The next time that I make it, which will be soon, I think I’ll try it with mascarpone cheese, which has more of neutral taste, in place of cream cheese, so that even more of the attention is on the different coconut flavors!

I made this last year before Xmas eve day. I had prepared everything in your ingredients, it's a lot of work bc of step by step. The best thing is to start in the 1st early morning. Everyone loves it and told me to do it again for a holiday or a special occassion. I recommend 10 oz of cream cheese, I think 12 oz is too much filling. This is perfect for everyone who's in the keto diet and sugar-free.

Thanks. I try my best to make my recipes accessible to everyone. A printed recipe is so much better for me, instead of constantly looking at a gadget while cooking. I thought others might prefer that way too.
Not enough people have posted that actually followed the recipe. I made this following your recipe and it is the bomb!!!! So creamy and decadent. I look forward to eating it each time. The only mods I made: instead of artificial sweeteners, I used natural ground up stevia leaves (turns your pie a slight shade of sage color, but I think healthier than artificial sweeteners) and I did not use the gelatin in the whipped cream. Those are the only changes I made. Very important (and you probably already know), if you use stevia, you cannot use the quantity that the recipe calls for. You have to use waaaay less or it will have that horrible bitter taste. I literally eyeball it and take little taste tests as I add. I probably only added a teaspoon to the pie mixture and less than that to the whipped cream. Delicious pie! Thank you! 🙏👏👏👏

It's been hard trying to figure out a way to make royal icing for some recipes (I typically just skip it). I try to avoid the ultra refined low carb sugars, but I think a little here and there should be fine. At least we are avoiding sugary foods and generally eating healthy. Hi Lisa, thanks for sharing! I couldn't have done it without your explaination as the recipe looked kinda complicated. But it was actually not as troublesome as it seemed. I have tried this recipe with every ingredients that it asked for, and it turned out exactly as how it looks in the video. It was very good, not too coconuty, very creamy and fluffy, but could be plain if you eat more than one piece. The topping part is important to give the different textures throughout different layers, and the full recipe is a very big size cake, enough for 12 people to have a piece for each. It is a keeper if you like mild flavored and creamy pudding.

Heavenly Lisa. Love coconut pie. So this is a creamy like cheesecake version of a coconut cream pie. I'm trying to stay away from milk or cream for a while,,letting my gut heal some from lactose intolerance. Trying to give myself a month then slowly incorporate it again. The coconut cream I can have right now,but I'm sure the cream cheese added puts the flavor over the top. Ide love to make this for my ladies at my Easter paint class. I'm positive it would be huge hit. Thanks!!
Vickie, I've been staying away from dairy too due to autoimmune disorders. What I use in this recipe is Violife vegan cream cheese and Silk brand dairy-free heavy cream. The cream cheese not only adds flavor, but it makes the filling a little creamier too so it's not just a pudding. I hope you give this a try with the dairy-free options. I'm planning to make it for Easter dinner.

I'm not sure if they offer cold packed items. I've never ordered anything cold. But one time my lilly chocolate chips came melted together which was so aggrevating. Vickie Cook The Silk brand of heavy cream just came out but it’s been selling out in my local stores. I should have stocked up on the Violife cream cheese last time I saw it in Whole Foods as it’s also a popular item. You can also buy Kite Hill almond milk cream cheese spread. I’ve found it at Target and local grocery stores.

We dont have whole foods or a target,,there is a meyers grocery about an hours drive away. We also have an Aldies store around hours drive away and I've heard they are going to merge with whole foods?? Sometimes we are in Lexington ky which is around 2 hours away from us,,but I wont stop looking till I find some because those items would help my issues so much. Really only groceries we have are walmarts and krogers and they are 45 minute drive one way. But I've even stopped having cream in my coffee and I'm hating it black. So I would purchase that cream all the time.. . .

Question......you listed coconut milk but when you poured it into the bowl it looked more like coconut cream because it wasn't separated. The canned coconut milk that I have separates, the fat on top and juice on the bottom. Is that the same as what you used? Which brand did you use? I put a lot more shredded coconut and melted chocolate so when it thickened it was okay. Next time I'll stick to the recipe and put less. The xanthan gum thickens the pudding. You’ll need to use another thickener if you leave it out. Glucomannon, guar gum, and gelatin should work instead but would need to be tested for the right amount.
To be fair, there are many sweetners that taste nearly as good as sugar so sweetner and desserts haven't been a problem on Keto. I just don't always like the coldness effect of erythritol/Xylitol in certain desserts. Allulose and BocaSweet have solved that problem for me in baking and liquid stevia (Sweetdrops brand) in nonbaked goodies and drinks.

It’s essential to test low carb sweeteners until we find what we like. Also, I like to mix at least two low carb sweeteners in one recipe, it tastes better.
Holy Crap!... I bought all the stuff to make this and it was over $50!... A small pack of Xantham Gum is almost $15 by itself! Why is healthy stuff so expensive?
One pack of xanthan gum goes a long way - I can use them in so many recipes. Coconut flour is pretty affordable considering the health benefits. When I buy healthy ingredients, I always think that they are still better, more affordable than curing an illness from eating unhealthy items. It’s the bigger picture! 😉

Can you use liquid sweeteners like honey or maple syrup?
Both are avoided in keto unless they are the sugar free versions, there are products offering the sugar free version of honey and maple syrup

You can use any sweetener. If you have a Costco, the monk fruit sweetener is reasonably priced there as it comes in a large size.
