Pastry is a delicate art, it has to be measured or it could all go terribly wrong. It’s a real science, I used to work as a chef for many years and it wasn’t my favourite line to work in. Pastry chefs are real specialists.
When baking you usually don’t get the results your aiming for without measuring. You may can get away with making cookies with just eyeballing but even that is risky 😅 Baking simply is art and science mixed together.

@Fizzturtle. I've been using Delia Smith's lemon meringue pie recipe for years. She bakes the pie, and the meringue is crispy on the outside and marshmallowy on the inside.
I tried this recipe myself and what happened was that I cooked the eggs so it was basically lemon eggs I guess. I tried another recipe and it said to temper the eggs meaning put a small amount of hot liquid, then put the whole thing in it. This worked out.
Nov 24-'20~Thanks...after this cooking I would take everything from this studio with me...yes bakeware is really really fine looking...and lamps are so so nice...so this is how the tool for making brown tops on cream looks like...that's new to me...enamel dish where ingredients are cooked on stove is so so god looking...and jeans shirt on Gentleman fits well to the modern classy appeal of aesthetics...very nice...we are in ''new normal'' under covid ...this was nice..

Wonder how they calibrate the scale to show volume instead of weight... do they have options for different liquids? Do we have to recalibrate it for different liquids?

I prefer a French lemon tart base personally not a fan of the curd. But I do love watching this guy. Makes u wanna cook like a really good mate willing you on top man

On second thought, you'd probably want your Lemon curd to cool before you put in in the crust so the butter in the crust doesn't melt.
