Flor De Cana 7 or 18 works great for this. Very complex and very tropical tasting. You’re right if I want to make something for a novice or newbie this is perfect!😊

I was all set to disagree with you about the absinthe. I got mine from a friend who's a top drawer vintner in Sonoma who grows his own wormwood and distills absinthe for personal consumption that's second to none and better than anything I've had on the market. I'm delighted to use it whenever called for. I tried this cocktail both ways fully expecting to prefer it with absinthe. But in this case, with this particular cocktail-you're right. It's better without it.
your right about absinthe, I'm not a huge fan of it either but I don't mind Herbsaint in the Dr.Funk! that's probably because the Hamilton Pot Still Black is so strong it doesn't give the Herbsaint a chance to punch through lol, it's actually a nice balance.
Just saw this drink on the tiki subreddit this morning, now a full video here. Might have to actually make that vanilla and cinnamon syrup one of these days...
I use cinnamon syrup all the time this time of year, even as a substitute for regular syrup to spice things up. Using a little bit in an Old Fashioned for example makes experimenting with different bottles a lot of fun

Im making this this weekend! If you did make Don’s Mix - do you think the alcohol in the Allspice Dram would extend the shelf life of the vanilla syrup? Or would it only last a few weeks regardless?
I'm not sure since St Elizabeth is 22% ABV you'd be cutting it in half but also increasing sugar. I use a 2:1 vanilla that I keep in the fridge for many, many months.
You are not cancelled. Pernod can be tricky and for sure can overwhelm the cocktail.

Pupule is one of my favorite in Smuggler's Cove so I'll definitely have to try this. I always use Bacardi 8 for it.

No worries about Pernod/absinthe. Definitely needs a deft touch, or easy to eliminate if you do not like that black licorice flavor.

Pernod/Absinthe in my opinion pair far better with dry whiskey or gin cocktails than the sweeter tiki cocktails.

I use an atomizer for my Absinthe because of that reason. One mist in the tin and that’s it.
