Pantry Haul of Essentials and More Healthy Cookies!

    I am taking you along today to use up the half can of pumpkin in my refrigerator to make a second round of these wonderful cookies! It was also time for me to head to the once a month pantry to pick up some non food essential items commonly used around the house.
    RECIPE:
    Pumpkin Oatmeal Cookies
    Ingredients:
    1/2 cup flour
    1-1/2 cups rolled oats
    1 tsp pumpkin pie spice
    1/2 a 15 oz. can of pure pumpkin
    1/2 banana, mashed
    4 tbsp coconut oil ( I used almond oil)
    3 tbsp maple syrup (I used honey)
    1 tsp vanilla extract
    1/4 cup low sugar or sugar free chocolate chips (I used sweetened coconut)
    Directions:
    Preheat the oven to 350° F.
    In a large bowl, combine flour, oats, and pumpkin pie spice and set aside.
    In mixer bowl, mix pumpkin, banana, oil, syrup, and vanilla until well mixed.
    Combine the dry ingredients and mix gently until flour and oats are well coated. Do not over mix.
    Drop on greased cookie sheet about 2 inches apart and bake for 25 minutes.
    Depending on the size of the cookies, it should make 13-15 cookies.
    These are so good and good for you!
    * This recipe was adapted from New York City dietitian Theresa Gentile of Full Plate Nutrition.
    Note: The add on can be substituted for what you have on hand or prefer. I chose not to do sugar free chocolate chips because I do not like them and substituted almond oil for coconut oil because that is what I had on hand.

    Love your cute little garden! How fun!! If you like dark choc chips, they could be used in the cookies as I think even diabetics can have a little dark choc? The coconut is good too though. I would add walnuts to mine as they go good with oatmeal. Yummy! Thanks for sharing. I will try this recipe. I'm not a lover of choc chips in any pumpkin or banana recipe, but have two friends that love it. So, when I make pumpkin bread, banana bread or muffins, I will add choc chips to their portion.     Hi its me again!(Joline) I think thats so funny, Spice does tricks for the same treat! You should show him doing it and carrying it around! I lost my dog in January and have been so lost without my little"Buddy", I miss him so much, we're looking for another small dog because i dont think I can live without one!!(Ive had only 3 dogs in my adult life in the last 30 years, they are so funny and add so much companionship and love in our lives!!) Give him extra snuggles , hugs and treats from me!
    P. S. I hope I didn't offend you when I said you reminded me of my grandma, I meant it as the best compliment!! She is who taught me the most about cooking and baking from scratch! She was the best!❤

      Ohh, now I made the connection! Naa, I do not get offended and view it as a compliment. I was just kidding with you. Yes, dogs do bring a lot of joy to our lives! I often say, I am not sure if I saved his life or he saved mine! I got him right after my mom's death, funeral and a week long vacation to just get away and be still. I came back home, went down to the dog shelter and adopted him that day. He was 1 year old per the vet. He is a hand full but I love him. LOL

    I love the essentials giveaway. Our food pantry does it too. We got 4 toilet papers, laundry soap, dish soap, and Paper towels.

      This place took a look around the city and decided to do the essentials pantry instead of another food bank to meet that need. It was a fantastic idea and in honor of one of my friends who has passed away.

    Good evening Suzzie! I was busy today! We got the chicken coop almost all done. I got the bread made. And I got all the laundry done and hung up. I still have some on the line and it may have to stay until tomorrow because after it got all hung up a cloud came out and cover the sun of course. Tomorrow isn't calling for any rain and it will be 64 so I can just leave it!

      @@justcallmesuzzie I am working on that. My phone only allows me to make like 1 minute videos and as soon as I transfer them to UA-cam I have to delete them from my phone lol. I was going through a box the other day looking for something and I found an old camera that records video. I will be on summer break starting June 1st so I am going to start playing with it and try it out! The property is very overgrown so there is a lot to make videos of lol.

    suzzie I have another awesome banana oatmeal cookie for you to try. you need 2 ripe smashed bananas and 1 cup of quick oats and one fourth cup of walnuts or nuts of your choice but just crush them up. You can replace chocolate chips with coconut or raisins. Bake at 350 for 16 minutes or until bottoms are golden brown.

    This recipe is a lot like the ones I made for my boys. They are my oldest son’s favorite. I do use the chocolate chips, not so much a fan of coconut.

    I think you could use your unsweetened applesauce from the pantry, in place of your pumpkin for a different flavor of healthy cookies!(?) Most bottles of vanilla the caps measure 1 tsp. So you dont have to use a measuring spoon, measure it 1 time to be sure, then you dont need a spoon for that for the rest of your bottle of vanilla! ❤️ Jolinegot a new phone a few months ago, not sure why my name doesnt show from it, when i use my old phone and tablet it does!( Lol! I'm very tech challenged, so there's that!) Have a great day!

      Yes, those are good suggestions! I have pumpkin that I need to get used up so that is why I am using the pumpkin. I knew that about vanilla but for some reason I just keep using the spoons. LOL
