- Join Molly Baz and Adam Rapoport at their homes as they make BA's best chicken parmesan. Let’s get one thing straight: We love chicken parm, but we’ve had our fair share of mediocre versions. So we took it upon ourselves to do a deep dive into this iconic dish, and come up with what we deemed our ideal recipe. In the end, that means we kept the cutlets a little bit thicker so they wouldn’t get overcooked. We gave them a shallow fry to achieve a crispy, evenly golden-brown breading. We blanketed them in a simple yet rich tomato sauce, which gets extra depth from tomato paste. And as for the cheese, we landed on a combo of Parmesan, for its salty edge, and mozzarella, for its creamy ooey-gooey texture. A word to the wise: Although you’re only using four chicken breasts, this recipe will feed up to eight people (and even more if you’re serving other dishes along with it!). But don’t fret about leftovers: They make for a great sandwich the next day.

Props to Adam. He's a modern genius. In a time when magazines all around the world were going out of business, he not only kept BA in print, he turned it into a digital powerhouse. And he also makes a pretty dope chicken parm.

@@omi1377 Every commercial kitchen, honestly. One of the few industries that regularly hires "Crazies" because it's the back of the house, and honestly it helps to be a little crazy, to cook food all day for strangers you never even see.
A lot of crazies out front too, but they tend to be better at hiding it.
Definitely a lot of different personalities!
The only really unrealistic thing about the Movie "Waiting" was it all happening in 1 day. That was about a month's worth of craziness, for a kitchen that size, and price point. (Basically an Olive Garden, or Applebee's.)
There's more people than the hosts we see, and some of them definitely do look a bit crazy

I’m just saying: an even mix of Panko and Italian bread crumbs is way better than just panko or just bread crumbs. If you’re reading this, try it and see for yourself!
Sounds good. I think sometime panko gets overrated/overused.
aomeisaru yeah, I like panko because it’s gives a nice crunchy crust, but by itself, it doesn’t cover the meat that well, and with bread crumbs, it covers nicely, but the crust isn’t as crunchy, so with the two you get the best of both worlds imo
I did that .. I also added a bit of grated parmesan cheese in with bread crumbs/panko... the crust was perfect on the chicken!!

I watch these with captions enabled, and at 9:22, when Rapoport pulls his breast out of the pot, there is the sound of bubbling oil, but the captioning software registers it as “applause”. And I thought, well, that’s probably the closest he’ll get to real applause for quite a while.

Really liked this format of two chefs working with two different setups. Gives you a really good idea of what to use and do while cooking it on your own with your own set of tools
