My husband lived in Savannah Georgia as a child. He grew up eating Dukes. When we'd go back to Savannah to visit family, I'd buy a jar for him because it wasn't sold where we live. It is now, but I had more fun buying it in Savannah. It was a special treat for him.

I like using cream of celery in my squash casserole and a touch of yellow mustard. Gives it such an incredible flavor. Also makes a great sauce for pasta and veggies. Cream of celery, a teaspoon or two of yellow mustard, and shredded cheddar cheese. I cook spiral pasta together with broccoli and carrots and then pour this sauce over it. My kids loved it growing up!

You remind me so much of my granny and the way she cooked. I loved going to her house on Sundays and having Sunday lunch with her and afterwards we would have homemade ice cream. She made some of the best sour cream squash and biscuits and roast beef and gravy. I love memories like that. My daddy just passed away a month ago and the jokes and stories he could tell. We love squash and onions. I don’t put water in. We love them a bit of bite but browned some. We have had Dukes Mayo for a couple of years now. But my son likes Hellman’s better? But that’s what he’s used to. My husband and I like Miracle Whip!

We love squash, too! Here is another squash casserole recipe: Chop one large onion, one green pepper, and cut 4 lbs of squash into 1" pieces. Boil together until tender. (You don't need a lot of water b/c the squash gives off a lot.) Drain well in a colander - cover with cold water and press out as much liquid as you can. Mix the onion/pepper/squash with 1 C mayonnaise, 2 C grated cheddar cheese, 2-3 beaten eggs, 2 Tbsp of yellow mustard (any kind) and 1 tsp each of salt and black pepper. Put in a greased 9 X 13 pan and bake in a pre-heated oven at 350 until golden brown and firm - about 45 minutes. The casserole will firm up and cut nicely into squares. Even people who "hate" squash love this casserole and it's great for people who don't eat bread or gluten. You can make it ahead and keep it in the fridge, but then it takes about an hour to cook. It also freezes and reheats well.

Great easy recipe! I usually throw in veggie powders, fresh or dried herbs…lots of freshly ground black pepper and will add Mayo and some sour cream. I use Panko bread crumbs! I make enuf like you….to serve one dish and freeze the second dish. Great to fall back on it…..on a lazy day!! Thks so much MeMe! Ahna

Mmm!! I love me some squash casserole. Loved hearing your "A Trained monkey" story. It puts me in mind of my ex's grandaddy years ago. They lived in a small....southern town and they didn't eat out. Like ever.They may have been to a little country breakfast diner before, but that's about it... well one day there was a storm and the power was out, and btw, this was around 1986 . We lived just across the creek from them and we decided to meet up at the local Hardee's. I walked in and he and nanny were sitting at a booth. I could tell by the look on his face that he was a little more than upset. I walked over and asked him what was wrong and he said I don't have any time set to come back here. We are starving and these young people just keep staring at me and nanny like there's something wrong with us, i said grandaddy, you have to walk up to the counter and give yours and nanny's order and they will either give it to you or you can sit down at the table and they will bring it to you when its done. He said i have never heard of going out to eat for you to have to go stand at a counter to order your food. No wonder we don't go out to eat!! I laughed so hard, to myself of course! If you bake it in a shallow dish, you can have twice as much crunchy topping.
I add a little sliced almonds to my topping, makes it real crunchy

My late mother used to make squash casserole for Thanksgiving. I often thought it was macaroni and cheese. It was so good. I received your wonderful cookbook the other day, it arrived so quickly. I see so many recipes that I plan on trying. What I love is that so many of them are quick and easy with no fuss and most of the items are already in my pantry. So many of my cookbooks or recipes call for so many ingredients that I have to shop for before I can make them, not so with yours. Thanks so much and I'm really enjoying your videos! Great easy recipe! I usually throw in veggie powders, fresh or dried herbs…lots of freshly ground black pepper and will add Mayo and some sour cream. I use Panko bread crumbs! I make enuf like you….to serve one dish and freeze the second dish. Great to fall back on it…..on a lazy day!! Thks so much MeMe! Ahna

Loved hearing your "A Trained monkey" story. It puts me in mind of my ex's grandaddy years ago. They lived in a small....southern town and they didn't eat out. Like ever.They may have been to a little country breakfast diner before, but that's about it... well one day there was a storm and the power was out, and btw, this was around 1986 . We lived just across the creek from them and we decided to meet up at the local Hardee's. I walked in and he and nanny were sitting at a booth. I could tell by the look on his face that he was a little more than upset. I walked over and asked him what was wrong and he said I don't have any time set to come back here. We are starving and these young people just keep staring at me and nanny like there's something wrong with us, i said grandaddy, you have to walk up to the counter and give yours and nanny's order and they will either give it to you or you can sit down at the table and they will bring it to you when its done. He said i have never heard of going out to eat for you to have to go stand at a counter to order your food. No wonder we don't go out to eat!! I laughed so hard, to myself of course!
