  • The Immersion Method of making coffee (letting the grounds steep in water, rather than pouring water through) makes my favorite cup. It also, typically, makes an unholy mess. Up until now, that trade-off has been worth it to me. But then my handsome husband BIGGBY COFFEE Co-CEO Bob Fish brought home a Clever Coffee Dripper, and the game has changed. Combining the very best features of a French Press and filter drip brewing, The Clever is a no fuss no muss way to make a delicious cup, and clean up is a snap.

Excellent vid. I've had the clever dripper for a while now and my perfect measure is 80g to 300mls water. I also use it to strain my cold brew which is the way I like my coffee the best.

I’ve never heard of removing the “scum”. Can you explain that?
Also a lot of newer recipes call for water first then grounds, which helps the fines not clog the filter, causing faster drawdown.
    Great video!

Hi! Thanks for your watching and thanks for your question! It's true that some people favor water first, but the coffee tends to float requiring stirring. And also, it skips the bloom stage, adding carbonic acid to the brew. The scum is made up of carbon dioxide and other flotsam that doesn't contribute positively to flavor. Cheers!

That all makes sense, thanks for replying!

I've tried both methods and definitely prefer the coffee grounds in first method.

Why are you removing the scum, that is the whole point of the filter 😂 that’s why the clever is better than the French press, as you don’t have to bother with that step.
