  • In this video we take another look at the Clever Coffee Dripper and some specific brewing parameters:
    Coffee first v Water first
    Paper filters v Cloth filters
    Water temperature
    In each instance we'll be comparing brews to find out which tastes the best.
    As a little curveball we will also take a look at brewing tea with the Clever Dripper!

    Thank you, much appreciated … so water first, rinsed Filtropa filter paper & a hotter water temperature 👍 with my usual 27g (Wilfa ground coffee, set on Filter for 10secs) & 447ml of water … marvellous 🤩

    Nice video. I’ve been a fan of water-first for some time and find it really improves drawdown. Couple of questions though:
    1) what recipe do you recommend?
    2) what grind size (ideally based on either a Wilfa Uniform, Niche Zero or K-plus for comparison)
    3) what filter papers do recommend? Only ones I can get locally are Melitta but loathe to try buying something else without a recommendation.
    Also, tried to enter the competition (as dropped mine and cracked it last week 😢) but for some reason it won’t recognise my entries. Do you know if there’s a problem entering on an iPad?

      1) I used 21g coffee to 350g water which is pretty much a standard filter ratio (60g per litre)
      2) I used the Wilfa Uniform for the grinding, probably should have stated that! It is set at number 30 and I went for a three minute brew time, with the drawdown taking 40-50 sec
      3) I use Filtropa papers most of the time as my batch brewer uses these as well - they are on our website
      Not sure what the issue is with the competition. Some entries came through around 8pm yesterday so it is obviously working. I've had a look through the documentation but can't see a reason for the issue - sorry!

    I find that I need a coarser ground when doing coffee first, otherwise it's too bitter. I personally do water first though.

      For me depends on the roast.
      With darker roasts, agreed.
      But I find Coarsely ground Lighter roasts tend to be on the sour side. 🤷🏽

    So what is your preferred method now from start to finish, including when you stir and how long you steep etc? Thanks

      Gary I stick with the water first method, giving the coffee a short and gentle stir when I drop it in. Then the brew time often comes down to the coffee I’m using and I’ll adapt accordingly. For some coffees I like a short brew time so I’ll maybe release at 2:30 and then with the drawdown of typically 40 sec I get an overall brew time of 3:10 or thereabouts. For other coffees I will increase the steep time. Ultimately it comes down to personal preference and I would advise having a broad method and remaining consistent with amount of water and amount of coffee as well as grind. Then play around with brew time only. By focusing on one variable only you will better understand what is happening to the coffee

    what do you think about difference brown paper like melita vs white paper like filtropa?

      I don’t particularly drift towards one or the other. Just whatever I can get my hands on. The only thing I do is make sure I rinse the brown filters more than the white.

      I tend to stay within the word Aeropress for most brewing methods when using the Wilfa grinders. So for the Clever Dripper I would work on the coarser end of this range

    Would you change the water temperature when brewing medium roast ?

      I tend not to change my water temperature when I brew coffee. Personally I think you can lose a lot of heat during brewing. I always aim for around a 97 degree start temp and then hope it retains around a 94 degree brew temp throughout.

    How does one make 2 mugs (ceramic, not see-through) of coffee with a Clever dripper and minimal other stuff? All videos conveniently show one mug/cup only.

      The standard size of the coffee dripper restricts the volume of coffee you can make, hence all videos showing one mug. However you can buy a 500ml dripper which should answer your question provided your mugs are no bigger than 250ml each! Link to 500ml dripper www.hasbean.co.uk/products/clever-dripper
