It's interesting. Its kind of tricking its way into a kettle corn profile, which would really work well with the caramel drizzle and speculoos waffle (but i doubt it came out that way like she put it in, it would def need to be a batter which wouldnt be that hard). It'll be a bit dense due to not making up a custard in the pan, but the whipped cream would give it the body, and removed the need for salt cooling and churning. If it were me, id have added like 1/2 teaspoon of salt and cinnamon, and maybe a touch of vanilla, but i can see myself eating that, maybe even paying money for it under mone controlled conditions.
As a lover of popcorn and popcorn flavored Jelly Belly jelly beans, I’d definitely try it. Not something I’d want to make often, because that’s a lot of steps! Sort of like all the steps to make Mexican fried ice cream. Far too much effort! 😂
With all the other stuff they added, it seemed like the finished ice cream was only like 5% popcorn.

Far too much effort, too many steps. Unless there's some health imperative then it's easier to just go buy ice cream from the store.
You can make homemade ice cream with some heavy cream and a can of condensed milk. It doesn't have to be weird like that. 😂
