Farming is an amazing way to obtain food for novices and pros alike. It’s certainly not “meta”, since it can be a time sink, but it’s a rewarding game within a game.
I never really practiced this, and my attempts didn't get very far, so take this with the whole salt shaker instead of a grain. Farming feels like a great idea on paper, especially in multiplayer since people can take turns taking care of the farm, staying close to base, while the rest of the team goes out for supplies.
To answer your question on why some of your plants didn't grow giant, the plants on the end of a straight line will often miss the family bonus due to distance unless your tilling is near perfect (or you use a tilling mod).

No, no stress point given are there any weeds in a 3x3 ? No, no stress point given Each potato checks for these conditions individually whenever it grows, planted seeds do not check for family, weeds or overcrowding when they are planted. Example 2: X O O O X X O O X In this setup only the middle potato meets the family criteria because the corner potatoes are too far apart from one another. The one on the right middle side will also not be able to meet the family bonus because the left up potato is just outside of the radius. You carrot placement: X = potato C = carrot O = empty G = garlic O O O O O O O C C C C O X X G G X X X X G G X X O C C C C O O O O O O O as we see here the garlics and potatoes each are able to meet the family criteria due to correct placement. When it comes to your carrots, the ones on the far sides only have 2 other carrots in their radius and thus do not meet the family criteria. Optimized placement: O O C C O O O O C C O O X X G G X X X X G G X X O O C C O O O O C C O O With this setup all carrots can meet the family criteria. One more thing: Each garlic plant needs 4 arrows worth of compost,. Each fresh plot starts with a minimum of 2 arrows of each nutrient. Rot gives 1 arrows of compost to the plot. By placing the garlics on a fresh plot, one one each corner so that they meet the family criteria and by fertilizing each plot with 2 rot you will have covered all the family and nutrient needs of garlic which means that you can grow garlic whenever u want, not being restricted to the plants of the season that give compost to the soil.
This is actually really cool I have been playing don't start for 8 years now and when they added the new farming mechanics I hated them because I didn't understand them but just pretended like they sucked but you actually helped me understand it more than most because you just explained it like a normal person not in depth or anything crazy I'm definitely gonna try for some giants my next world

Bro I have a tip regarding a friendly fruit fly. In the video u say that you can leave base whenever u want but you actually can't. Friendly fruit fly works only when you are close enought to load the area, sooo when u leave ur base fruitfly does not work ;C. Yeeach it can mess up the harvest sometimes. And it is the reason why u want to have ur farms in the center or near the center of your base! Hope this tip will help u sometime!!!!!!
This being said, you didn't get giants when you did the 8x4 with watermelon/poms (or the same setup with toma and peppers or dragonfruits) because the two poms at the ends were too far from each other to avoid the "not enough family" stress point. This would accumulate 4 stress points per grow cycle in those end plants, making giants impossible. You would have to utilize a larger growing area to take advantage of that type of synergy.

Sanity shouldn't be a problem while farming. If farming is your only goal, you can use sleep easily. You also obviously have the classic methods of non-food sanity like clothes and pig friends.
The only problem with that is that you have to give your full attention to your crops in order to be able to get giant crops, which 2 of his goals is to get 1 of all types of giant crops and to get 100 giant crops.

I think the reason why you only got some onion and carrots to be giant is because they dont check all the way out it seems they only check 2 out from them in a square so they dont see the crops that are 3 spaces away
So if one wants to more reliably get giant crops, the crops need to form a sort of 2x2 square for that family group bonus. Perhaps a fairly simple & easy to achieve layout would be to pick 4 crops that could work together nutrients wise & put them in a 3x3 arrangement in a plot. One kind with 4 in the plot(🟩), two kinds with 2 in the plot(🟥& 🟨), & one kind with only 1 in the plot(🟦). Lay them out like so*: 🟥🟥🟦 🟩🟩🟨 🟩🟩🟨 Then add more plots so you can form a 2x2 plot square. hey I noticed you have a backpack, yet you keep the pigskin in your hotbar. It is better to put the pigskin in the backpack because if you die the pigskin will drop and a mob will eat it, but if it's in your backpack it won't drop and get eaten.

It was pretty painful to watch you plant crops without geometric placement and action queue. AFK-ing at base isn't really what the game is about. You can leave crops for 3-4 days at a time and go do something else while they grow. Not killing deerclops for the eyeball, or making a walking cane, or making a winter hat, or getting a better weapon than a spear, or not even making a lantern... I understand that you find ruins rushing too much, but you should really master the basics. Even for the farming challenge itself, you didn't make a one man band, didn't do self feeding farms without first saturating the soil with nutrients, and never tried to get a starcaller's staff from the ocean setpiece/didn't play as wickerbottom to cast lux aeterna (and horticulture abridged). You can also plant crops out of season to double/triple your seeds. And the challenge should be able to be completed by ~day 38 if you planted the spring crops on the last day of winter. As for general purpose farming, I tend to collect seeds while exploring until spring, then plant them all. This should net you around 60-80 crops, with at least a few of the important ones. Convert the important ones to seeds, then you can start filling up farm tiles with nutrients. 100 per type is the max amount, and the easiest one to amass is the rot/compost nutrient: so you just use 13 rot on a farm tile, then plant durian/garlic, or even asparagus/corn to convert it to the other 2 nutrients. You can also feed a werepig a bunch of lightbulbs to convert them into manure, use 13 per tile, and plant dragon fruit/pepper, or even eggplant/potato. With 9 plants converting 8 each cycle, and crops going through 4 cycles, that's potentially 288 total rot/manure points converted into 144 of the other two, so you need to fill the farm tile up again in the 'small' stage with another 13 rot/manure, then again at the end. So in total 39 (about a stack) of rot/manure to saturate a farm tile and ~3 in-game days. Then you can consult The Starver's Guide to Self-Feeding Farms forum post, All Giant Crop, Auto Nutrient Pairings (& Fertilizer Pairings) List By Lakhnish Monster doc, or the wiki to get self-feeding crop combinations. Every crops is in season in spring, except pepper and pumpkins, but you only need a single pumpkin for scarecrows (misery toadstool). As for peppers, you need a ton of them for warly seasonings, so you should mass produce them in autumn. As for useful combos, dragonfruit+garlic+onion/pomegranate in 1:1:1 and toma root+potato in 1:1 is probably all you gonna need in spring, and then in autumn, you can do garlic+pomegranate+pepper in 1:1:1, toma root+pepper in 2:1, or pumpkin+garlic+pepper in 2:1:1.
Sleeping works as well and is easier (given he's got more food than he needs). As stated though, sanity isn't really important here as he can just kill the occasional crawling horror.

They CAN reach but only if tilled near perfectly. Any mod that can align tilling (including geometric placement) can alleviate this issue.

It was pretty painful to watch you plant crops without geometric placement and action queue. AFK-ing at base isn't really what the game is about. You can leave crops for 3-4 days at a time and go do something else while they grow. Not killing deerclops for the eyeball, or making a walking cane, or making a winter hat, or getting a better weapon than a spear, or not even making a lantern... I understand that you find ruins rushing too much, but you should really master the basics.
Even for the farming challenge itself, you didn't make a one man band, didn't do self feeding farms without first saturating the soil with nutrients, and never tried to get a starcaller's staff from the ocean setpiece/didn't play as wickerbottom to cast lux aeterna (and horticulture abridged). You can also plant crops out of season to double/triple your seeds. And the challenge should be able to be completed by ~day 38 if you planted the spring crops on the last day of winter.
As for general purpose farming, I tend to collect seeds while exploring until spring, then plant them all. This should net you around 60-80 crops, with at least a few of the important ones. Convert the important ones to seeds, then you can start filling up farm tiles with nutrients. 100 per type is the max amount, and the easiest one to amass is the rot/compost nutrient: so you just use 13 rot on a farm tile, then plant durian/garlic, or even asparagus/corn to convert it to the other 2 nutrients. You can also feed a werepig a bunch of lightbulbs to convert them into manure, use 13 per tile, and plant dragon fruit/pepper, or even eggplant/potato. With 9 plants converting 8 each cycle, and crops going through 4 cycles, that's potentially 288 total rot/manure points converted into 144 of the other two, so you need to fill the farm tile up again in the 'small' stage with another 13 rot/manure, then again at the end. So in total 39 (about a stack) of rot/manure to saturate a farm tile and ~3 in-game days. Then you can consult The Starver's Guide to Self-Feeding Farms forum post, All Giant Crop, Auto Nutrient Pairings (& Fertilizer Pairings) List By Lakhnish Monster doc, or the wiki to get self-feeding crop combinations. Every crops is in season in spring, except pepper and pumpkins, but you only need a single pumpkin for scarecrows (misery toadstool). As for peppers, you need a ton of them for warly seasonings, so you should mass produce them in autumn. As for useful combos, dragonfruit+garlic+onion/pomegranate in 1:1:1 and toma root+potato in 1:1 is probably all you gonna need in spring, and then in autumn, you can do garlic+pomegranate+pepper in 1:1:1, toma root+pepper in 2:1, or pumpkin+garlic+pepper in 2:1:1.

Sanity should be easy, kill some spiders and hire some pigs to stand around.
Sanity is the least important stat in don't starve, unless you're fighting a boss
Sleeping works as well and is easier (given he's got more food than he needs).
As stated though, sanity isn't really important here as he can just kill the occasional crawling horror.
