The balancing Syphon nowadays mostly are made in China as replica. There is a French company , Royal coffee maker, but that machine costs more than 15k usd. The balancing Syphon coffee maker has few fatal problems
1. You can’t alter your brewing time
2. Coffee must be put in first , so it will be less aroma and favors
3. You can’t use glass nor ceramic filter to enhance the favors
4. You can’t change the brewing temperature
5. It has less water pressure to compare to traditional Syphon coffee maker , meaning that it will also reduce the favors .
Thank you for your insightful comment. We checked out the machine you mentioned... and good lord. Those things are more art pieces than coffee makers. They look amazing.
In the unlikely event that we will someday be able to get our hands on one, we will be sure to do it justice. At the rate we are going, we will need only 99999 more years of UA-cam ad revenue to afford the base model.
The unit we reviewed here is probably closer what most people will purchase if they're in the market for something like this so hopefully the video is still relevant. Compared to the real deal, this is for sure a cheap replica, but at over $150, still not exactly "cheap" for how bad it is. More of an expensive novelty.

I have a royal makes good coffee. It holds more water too. I don’t use it a lot but it’s definitely a conversation piece.
1. You can’t alter your brewing time
The point is to take that part out of the equation, the brewing is fast right below boiling.
2. Coffee must be put in first , so it will be less aroma and favors
You actually don't, putting it in first is optional.
3. You can’t use glass nor ceramic filter to enhance the favors
Not supposed to be designed that way. The vacuum actually extracts about 15% more of the coffee's flavors and aromas if done correctly. I have never heard of glass or ceramic filter enhancing flavors. Say more...
4. You can’t change the brewing temperature
The sphion allows you to keep your temp just below boiling every time alot more temp controlled then any other method.
5. It has less water pressure to compare to traditional Syphon coffee maker , meaning that it will also reduce the favors .
You are probably correct on pressure, I am not sure this means it reduces favors though. I do think based on this video the amount of coffee they used per water was WAY out of proportion they put a ton of coffee in there. I would have used half the amount of coffee. I would have also waited about 7 - 8 minutes to drink once poured into my cup to lower the temp which enhances the flavors considerably. Always drink your coffee warm not hot if your looking for flavors.
Just wanna say thanks for the heads up to run a tank of clear water through the system a couple of times before brewing my first cup of coffee, or else that first cup out of the box will taste nasty and metallicky. I also discovered that by using bioethanol fuel, I can avoid a massive collection of black residue (creosote/soot) on the bottom of the boiler tank after a brew (it gets everywhere!). Finally, I discovered that if I stir the grounds in the coffee chamber (after the boiler is emptied), I can improve the flavor of the brew. For the most part, this coffee maker is not difficult to use and offers the benefit of use anywhere since it does not need an electrical outlet to function. BTW, this is also effective for making tea.
I'll be subscribing because I hope to see you guys revisit this syphon after a few use and cleaning cycles
Very honest and thorough report. The metal type being a factor is very useful to know. In fact the whole assessment is perfect reason I won't be buying one so will remove it from my Wish List at you know where! As we say in the UK it's a daft concept. My coffee making goes back to the 1950s First the jug method made like tea; then the Filter method; followed by MochaPot stove-top Italian machine 'Atomic' I still have that; Percolator (electric) next; My grandmother's Dutch coffee method; many brands of Bean-to-cup machines; An electric heating Lever-Pull manual brew machine; Finally the best taste comes from an Espresso machine (electric powered) uncomplicated with steam pipe for cappuccino frother. Nothing beats it. I was curious about this syphon system but only as a bit of fun - but now the joke has worn thin before I wasted any money - So thank you both for this. You'll get a Like from me.
I had coffee prepared like this in South Korea (they love coffee shops more than Americans). But theirs was a larger set-up meant for a group of friends and did not have any of the off-flavors that you noted.
Overall, a great way to generate conversation and be a centerpiece for a get together.
It's definitely fun to look at! Also I'm sure they had a much more high end machine compared to this cheapo one we used. At the end of the day it did what it was designed to do, which is create conversation :)

I very much enjoyed this interesting review and from someone who has been called a coffee enthusiasts cuz I've been drinking coffee since the 2nd 3rd grade. Mind you To each is own. Not everyone can have a copper or brass pot due to taste or allergies to fake metals. Believe it or not some folks consider the back bit as charing which does at time can be helpful in one's health.

moka pots suggest you run brews/water threw it at least 3 times before you start drinking it, maybe same here
For sure, we always run water through every apparatus multiple times before use. For some reason, if that apparatus involves metal, we seem to often get a hint of a metallic taste in the coffee. Maybe it's a mental thing?
I bought a couple Dollar Tree sink strainers ... and stuck number 4 cone coffee filters in them.

Yes we did, we ran it several times before tasting. We also cleaned it, obviously

I have used metal percolators and you have to season them by brewing several times before enjoying.
We did do that prior to filming and it still tasted bad!

I would try a glass version. I have a not expensive bodes that is glass and plastic that is easier to use and clean.

The best brand of balance Syphon coffee maker is Royal coffee maker from France now.

That’s less than dirt cheap. A REAL Royal Siphon is $10K
That orange flame was not good. It was too rich, it lacked air. The wick was too tall. Soot was the result. The flame should be bright or blue.

I'm here, because of curiosity, brought on by Animal Crossing: New Horizons - this is a "specialty" item you can acquire by frequenting your island's café and getting coffee (I believe "to go" every time?), and I had seen the character that runs the café having and using siphons, but I never knew what they were called or that they were actually (more or less, a novelty) item that people could order. But, good to know that they're not really worth it; I think I would be better off with either a stove-top espresso pot, or even a french press.

The quality Dutch syphons are made of copper and glass or brass and glass. Anything else is lower quality. There are also many different styles of coffee syphon. Some are made of mostly glass (all the surfaces that are to be heated or come in contact with the coffee are glass).
You can't judge the entire Dutch Syphon class of brewing device based on one lower quality product. And you definitely can't extend that opinion to all coffee syphons. Just saying.
