What I love about eating more plant-based, especially after coming from a WPF background like you, is how quick and easy it is to whip up a meal like this! Before, this would involve thawing meat all day, 48 hours of simmering beef broth, and oh, think of making it at least a week in advance to get a sourdough starter going! I constantly had to be thinking about every meal and snack a week ahead. Now I can just run a bunch of veggies through the food processor, make a couple sauces, a few dozen muffins (that many because I have 6 children), and I'm set for the week! I love it!
love sot curls...thin strips of portabella mushrooms is really good (from Philly and once ate several steaks at pats ...- .10) on a dare with buddies in the mid 80's
They're kind of in a class of their own. It's up to your personal preference to just omit them or find some other umami/savory element to add to the dish.

I also eat gluten free (celiac) , I use a gluten free bread/bun from O'Doughs, I also use GF tortillas and corn tortillas for wraps. You could always just wrap it in a Romaine lettuce leaf!

I have made a similar chees sauce, but instead of tamari, I use Worcestershire sauce (is that vegan?) and add miso paste.
Worcester shire is fish sauce. So no not vegan.
You can buy vegan Worcestershire sauce.
