  • Hello everyone, welcome to another episode of Akira's Sushi At Home!
    We are showing you how to prepare everyone's favourite fish,
    Aji, horse mackerel.
    Today’s video is intentionally made with less editing to show you the knife techniques to fillet horse mackerel.
    Apologies if Yuri's narrating was a bit of rush....wanted to squeeze in as much as she can!
    *Remarks:
    Some restaurants sprinkle salt after doing Sanmai Oroshi,
    but we skipped this as it is not mandatory.

    Very good video. I am a sushi chef in San Francisco. Many of these terms were thrown at me when I first started. The head chef is a very scary man. 😦

    I live in California and every once in a while these are in our waters. One summer when they were abundant I developed a taste for them but then I didn't see them for years. I just went down to the local Asian market and saw something labeled "Blue mackerel" but I knew it was horse mackerel, or Aji, or Gulongong...whatever you want to call it. It looked fresh too so I assume it was caught locally and came in recently. It can be hard to find truly sushi grade fish so I grabbed 4 lbs and came home to look for a video just like this.

      G S san, Ah how cool is that :D I also love fishing for Aji but only comes to our nearby water once a blue moon... Did you enjoy making sashimi?? Hope it all went well!!

      @@AkirasansSushiatHome Yes, I did the first preparation you showed. Cut those weird scales off. Pulled the bones out with bone tweezers. Peeled the skin off and chopped it into thin strips. Tossed it all with a little teriyaki, piled it on a plate, topped it with green onions, and then drizzled a wasabe sauce on top of that. It came out wonderfully!

    Hello! I like to catch aji whilst fishing. Is there anything I should do to decrease the risk of getting parasites if eating freshly caught fish for Sashimi?

      Hello UntoldLies san! Aji fishing is also one of my favourite thing to catch! To be honest with you there is nothing much you can do to decrease the chance of getting parasites if you want to eat it fresh. One thing you can consider doing is to chop Aji finely and eat it as Tataki style (by chopping it many times it simply increase the chance of smashing parasites...but obviously not the best way :( ) .
      Best option is, of course, to freeze then thaw Aji but then you have to sacrifice freshness...Such a difficult choice isnt it ;( So make sure to watch out carefully when filleting! Anisakis is fairly easy to spot...best of luck & enjoy cooking!!
