I always see recipes that say “You will not even believe these are Keto” and I bake whatever it is and am disappointed. These were fantastic, big, fluffy muffins and I am so grateful to Victoria for this new flour recipe. Just wish it wasn’t so expensive to eat healthier.
Just made them, still hot out of the oven, look and smell great! I used frozen blueberries because that's what I had. Poke them into each muffin after the batter is in the cupcake pan. I used 4-5 per muffin and because they were frozen they were easy to handle and did not bleed into muffin batter. Thx so much for all you do for us keto fans!!!
I made these today and they are soooo good! I made half the batter with frozen blueberries and half with Lily's chocolate chips. Mine took 35 minutes to bake, but they were moist and delicious. Oh, and they don't stick to the paper cupcake liners...bonus! YUM!

Stuart by chance have you found Dr. Sten Eckberg's channel yet? He is Very meticulously detailed in explaining the health and biological factors involved with keto. You should look his channel up if you haven't as you start keto. I started in fall of last year as a lifestyle change versus a diet. Dr. Stens information helped me accurately pinpoint my health issues to a fatty liver due to excess carbohydrates over time. So I knew I needed a change to whats healthy and not just a temporary fix. Fasting helps kick start ketosis and once you get fat adapted you feel the difference compared to how the body craved energy all the time on carbs. No more hunger issues. So good! I halved the recipe to make sure I liked it and also to prevent me from eating them all! When I made the 2.0 flour I also added the baking powder & salt to make it self-rising... It made 6 amazing blueberry muffins - baked for 30 minutes total without the topping. Covered after 15. Thanks for all you do!

Absolutely delicious. My husband, who does not like keto baked goods, said these were good too. :) I did use half bocha sweet and half allulose/monkfruit for the 1 cup of allulose. these did not brown too quickly and are really nice and moist. made these today and substituted peaches and added some cinnamon and nutmeg, added a little extra almond flour to the topping along with some sliced almonds, baked in a paper liner and baked 30 minutes, WONDERFUL!
I made these muffins this morning. What wonderful muffin! The very best blueberry muffin I have ever tasted. The best thing about these is how the Allulose sweetens them so perfectly...not to sweet. This dough is so 'clean' tasting, unlike the regular 'flour and sugar' muffins. WOW WOW WOW....I will never make these with the traditional high carb flour & sugar mixture. It worked but took about 35 minutes to cook. I didn't have quite enough of your flour so I made up the difference with arrow root powder. I could have eaten the whole batch in one sitting! Well Victoria I finally did it and took the plunge to get the stuff and make your flour 2.0. I wanted to for over a year and a half now but never ate the baked goods. Berries were my only dessert until now and I can’t tell you how excited I am to have the opportunity to bake again. Just had time to make these. I didn't have blueberries but did have fresh strawberries so diced them and added those instead. I didn't do the toppings on the muffins at all and they turned out great without it, so less time if a person is strapped for time. They are so delicious!!! I've just made these tonight, fresh berries with a batch of flour I had, VERY GOOD and I enjoy them (there are 14, and I'm tempted to eat more than 1 in a sitting🙂) - The recipe was easy and works well, I used standard paper cups with great results, some sticking, but not much - Happy to have a batch ready to go and I plan to make more for vistors this Thanksgiving.
I made the flour blend yesterday and these muffins are in the oven now! I can’t wait to try them. I added a little lemon zest and skipped the topping. As another commenter said I only had frozen blueberries on hand so I just pushed 3-4 into each muffin before baking. Thank you! 😊

These are delicious!!! I made them this morning. I ran out of butter so I used coconut oil. It made the batter thicker so I added a bit more milk. Even with that, they are so good and so healthy for me and my family. Next time I'll wait until I'm stocked with butter and think I'll add a bit more sweetener. I can't thank you enough for this recipe. Love your perfected keto flour blend. I think I'll make the strawberry poke cake next.
I have a silicon pan - not cups - so when I made these as directed, making 12 muffins, they were a bit moist. Still delicious, though! So the second time, I cooked them for 30 minutes, covering after 20 minutes, and took them out of the pan to the cooling rack after 10 minutes out of the oven. Perfectly fluffy and slightly crisp around the sides. Just how muffins should be!

I like things like blueberry muffins MOIST - not dry - I'm making these today. TY Victoria for this recipe. After making them, I felt they were too sweet (for me) I think in place of the "milk" They would be better with greek yogurt and maybe a little grated lemon rind. I will be making them differently next time. I did like the moistness of the muffins though.
I am going to try this weekend! I think I might swap out the cinnamon in the topping with lemon zest. I also think I will try Bochasweet granular too to see if it doesn't brown as quickly. I will report back!
Hi! I changed this recipe a little bit. Actually combined your recipe and a non keto one that had sour cream in it. I of course left it in the oven too long and slightly burned some of the muffins. Never fear, I did not throw them out! I cut the burned part off, cut them into chunks, topped it with fresh blackberries and whipped cream. It was the best blackberry shortcake I have ever had the pleasure to eat. Your recipe is a fantastic starting point for me to use my imagination and create yummy treats! Thank you so much!

The perfected keto flour is a good meal. Think it must be the egg white powder to give the baking a really good decent texture to munch into. No problems with these - delicious.

Victoria I love these muffins! I get 18 out of mine so it’s 1.5 net carbs per muffin but can you tell me the protein, fat, sugar and calories per muffin. Trying to track my macros closer.
I made these muffins this morning with with your 2.0 flour. They were really good but... They were very moist at the bottom and too crusty on top, also found them to be too sweet for my taste so I will use only half the sugar next time. What do I cover them with so they don't get so crusty on top? I used parchment liners, will try with no liners next time. Thank you and God bless you!

Maybe these wonderful muffins. Thanks so much. I have no baking experience and they came out great. My wife wants me to make another batch while we still have blueberries. Perhaps you can help me with a problem I had. It was really difficult to sift the flour. Tried a sifter with a squeeze gable but that wouldn’t work. Used the sieve but it was really difficult to get it through. There were some hard chunks that we removed by hand, not sure what caused that. We used the almond flour from Costco. Thanks again for your great videos. They inspire as well as instruct. A lot of the berries went to the bottom of the muffins. Thanks again.
I’m sorry I don’t use Costco almond flour for that reason. Ppl don’t believe me but there are hard reasons that I don’t use other brands than what I listed. That almond flour used to be very fine then after COVID became gritty so I couldn’t use it anymore

I found you a couple of weeks ago, and since then I've been gathering the ingredients for the recipes I want to try. I'm baking these right now. My batter turned out very thick. It looks thicker than yours as you are scooping them out. We have very low humidity where I live. Could that be the difference? If I added another tablespoon of milk next time, would I mess up the recipe?
I wouldn't recommend it because these really are moist! The banana might make it too moist? The mail reason though is that this is a keto recipe and bananas are extremely high in carbohydrates and forbidden on keto. Not forbidden fruit like the apple but just sayin...
Is there a reason you choose allulose over the other cheaper options?? My stomach can't handle the monk fruit with erythritol. It makes me sad because my wife makes delicious desserts with it
Here’s an idea for the frozen blueberries: coat them in your perfected keto flour and they won’t bleed into the batter.

I like things like blueberry muffins MOIST - not dry - I'm making these today. TY Victoria for this recipe. After making them, I felt they were too sweet (for me) I think in place of the "milk" They would be better with greek yogurt and maybe a little grated lemon rind. I will be making them differently next time. I did like the moistness of the muffins though.

I am going to try this weekend! I think I might swap out the cinnamon in the topping with lemon zest. I also think I will try Bochasweet granular too to see if it doesn't brown as quickly. I will report back!

Hi! I changed this recipe a little bit. Actually combined your recipe and a non keto one that had sour cream in it. I of course left it in the oven too long and slightly burned some of the muffins. Never fear, I did not throw them out! I cut the burned part off, cut them into chunks, topped it with fresh blackberries and whipped cream. It was the best blackberry shortcake I have ever had the pleasure to eat. Your recipe is a fantastic starting point for me to use my imagination and create yummy treats! Thank you so much!

The perfected keto flour is a good meal. Think it must be the egg white powder to give the baking a really good decent texture to munch into. No problems with these - delicious.

Victoria I love these muffins! I get 18 out of mine so it’s 1.5 net carbs per muffin but can you tell me the protein, fat, sugar and calories per muffin. Trying to track my macros closer.

I made these muffins this morning with with your 2.0 flour. They were really good but... They were very moist at the bottom and too crusty on top, also found them to be too sweet for my taste so I will use only half the sugar next time. What do I cover them with so they don't get so crusty on top? I used parchment liners, will try with no liners next time. Thank you and God bless you!

Great recipe. Just in time for spring! Many of the keto items that I have baked are "overly moist". I wonder if it's the silicone bakeware/liners?
Could be. Next time I will use disposable liners
My silicone pans take extra baking time. I lay foil over the top, so the almond flour doesnt burn, and cook for a few extra minutes.

Perhaps you can help me with a problem I had. It was really difficult to sift the flour. Tried a sifter with a squeeze gable but that wouldn’t work. Used the sieve but it was really difficult to get it through. There were some hard chunks that we removed by hand, not sure what caused that. We used the almond flour from Costco.

I’m sorry I don’t use Costco almond flour for that reason. Ppl don’t believe me but there are hard reasons that I don’t use other brands than what I listed. That almond flour used to be very fine then after COVID became gritty so I couldn’t use it anymore

Yes but you will get a gritty and cooling aftertaste
My favorite baking mixture is 50% allulose and 50% Lakanto erythritol
If it’s powdered swerve sweetener would that be ok.
I found you a couple of weeks ago, and since then I've been gathering the ingredients for the recipes I want to try. I'm baking these right now. My batter turned out very thick. It looks thicker than yours as you are scooping them out. We have very low humidity where I live. Could that be the difference? If I added another tablespoon of milk next time, would I mess up the recipe?
It shouldn’t hurt it at all sometimes I need more liquid
Can this be used to make banana bread or banana muffins? I have some bananas that need used up.
I wouldn't recommend it because these really are moist! The banana might make it too moist? The mail reason though is that this is a keto recipe and bananas are extremely high in carbohydrates and forbidden on keto. Not forbidden fruit like the apple but just sayin...

U need the bulk to absorb the liquid so replace the sugar with more flour “most likely”

Why allulose? Why not erythritol or monk fruit?
Is there a reason you choose allulose over the other cheaper options?? My stomach can't handle the monk fruit with erythritol. It makes me sad because my wife makes delicious desserts with it
Oh yes allulose resembles sugar more than any other sweetener has the least after taste

If u use my cakes and cookies you don’t need to add the baking powder since it’s already in the mix. So not use self rising.
I just took these out of the oven. They sat for maybe 10 minutes and I had to taste. I did not do the topping. I cooked for 23 minutes.
