Easy Step By Step Sourdough Bread Recipe

- Today I am sharing with you how I bake two loaves of sourdough in my oven at the same time. Below is my basic sourdough recipes I use for all my sourdough recipes. I doubled it to make two loaves at once.
Sourdough bread recipe
INGREDIENTS
500g bread flour
350g water (room temperature)
100g sourdough starter
10g salt
DIRECTIONS
In a large mixing bowl, combine sourdough starter, bread flour, and water. Start mix until it forms a shaggy dough. Add salt and mix well for 5-10 minutes.
Cover dough with a wet bowl and let rest for 30 minutes.
Give your dough a stretch and fold. To do this, gently pull one side of the dough out and fold over the top. Do this all around the dough. Cover with wet towel again and repeat 2-3 more times 30 minutes apart.
Let the dough rest in a warm place for 4-12 hours. This is based on the temperature of your dough.
Once the dough has risen transfer to a lightly floured surface. Shape it into a loaf by folding the sides towards the center and then rolling it tightly. (this is when you would add the cheese for the cheddar sourdough bread)
Place dough into a banneton basket and let rest 8-16 hours or overnight in the fridge.
The next morning preheat oven to 450 degrees F with cast iron in oven. Transfer dough onto parchment paper. Score the top of the loaf with a sharp knife or razor blade to allow for expansion.
Bake for 30 minutes covered. Remove lid lower temp to 400 degrees F and bake for another 15-20 minutes. (get to know your oven. You may not need to lower the temperature)
Remove the bread from the oven and let it cool on a wire rack before slicing.

Thanks for the tutorial. I do have one question dough ( xD ), whats considered bread-flour? So what type of flour (e.g. 405, 550, 1050 etc.) is it ?
I used the King Arthur bread flour. It says bread flour on it. Not sure the number.

I used 1050 and its good. Im guessing youre in Germany because this is the flour we have...A good tipp for to get the water right is to use an online "simple soughdough calculator". This has helped me a lot to know the hydration.
@@BM-gd6wn already tried it with 550 and Italian 00 flour. I definitely need to try it with 1050 and the calculator thank you for the advice.
The bread flour is just a higher protein flour. The king Arthur flour she is using is 12.7% protein. The numbers you are using are not familiar to me I think it's a difference in the country you live in. Many of the recipes from usa didn't translate well to a lot of European countries since apparently the flours are different.
