I love so much about these videos. The fact that he has english translations is amazing and I'm super appreciative. I also really appreciate how he doesn't act like he knows everything about the fish. He teaches us the fish's anatomy while learning it himself as well! I also love how respectful he is to the creatures he works with. He feels bad for them when he finds parasites or litter in their stomachs, and even if something doesn't taste as good as he thought it would, he still eats it and doesn't waste it. As a pescetarian, sometimes I feel bad for eating fish, but his videos actually help me feel better about it in a way. Keep up the good work Masaru! ❤

I've been butchering fish for 25 yrs.
Swordfish always have the most worms...easily 10 to 1 on other fish.
It's almost like these parasites have adapted and hope for a swordfish to come along and dig up sand with their nose to hook and burrow on skin. Parasites are usually expected with species that stay on the ocean floor. It's impressive when you figure in how much constant swimming time swordfish spend way above the sand.

Hi! Sorry for the English comment, I hope the translation will come through okay! I’m going into medicine, and have already studied a lot of anatomy and physiology of the human body. (If you don’t know what that is, anatomy is the study of the parts and mechanisms of the body, and physiology is the chemical and physical processes that make our bodies work.) I’ve always loved watching fished be “cleaned” because I’m a fish eater, and I really appreciate seeing the full process of how a living creature goes from the sea to my plate. It is also incredible how people with this skill know how to fillet and cut the fish, and it’s fascinating to me. Most of the time, in coastal areas where I live, fisherman will throw the “scraps” of the fish back to the sea birds, making none of it wasted. Your videos have shown me another reason to love this, which is that their anatomy is so close to our own! While I’m not an expert in human or animal anatomy by any means, the fish probably has an enlarged gallbladder to supply the extra enzymes it’s large stomach and predatory diet require. Also, this is a cool fact and was shown so beautifully in the video, the ripples in the stomach are called rugae (pronounced “rue-gay”). They are present to secret acid, and allow the stomach to stretch in times of plentiful food! Also, the stomach is a muscular organ, and moves like a stress ball to mix and digest food, which is why it is somewhat thick like in the video! Also thank you so much for the accurate English captions! I enjoy listening to people speak a language foreign to me while I can read the translation, it actually helps me learn bits and pieces of it! Once again, thank you for an awesome video.
If you made it this far here’s a cookie. Hope you learned something! 🍪👌😊

You could own a restaurant and I’d go until I run out of money! The food looks so good and I wish I were as skilled as you to cut fish. The meat of all the fishes you cut looks so yummy!

    カジキの背ビレの身側の骨はハーモニカという美味しい部位です。基本的に骨ごと調理して提供します。

If fish is frozen thoroughly first it renders it safe to eat raw. We don't see what he does with the sashimi off camera before eating it while everything else cooks so that's what I'd assume he's doing because he clearly knows what kinds of parasites these fish have and stuff. I always freeze fish all the way through once before eating any of it raw to kill off anything bad that might make me sick. Usually all "sushi grade" and "sashimi grade" means is that the fish has been frozen to treat it for parasites. Yes they only use the highest quality fish but even the finest salmon can have parasites in it. It still needs to be frozen first. Usually flash frozen to keep the quality as high as possible
