I wanted to do something special for his birthday coming up. I dont think hes had authentic Lebanese food in decades so I wanted to make a Lebanese feast for his birthday coming up. Very appreciative of these simple authentic recipes.

So I made this rice today, and as delicious as it was, it did turn out a bit sticky rather than grainy. Is that what the texture should be? And if not, where did I go wrong, lol?
Yay!! The texture should be fluffy non-sticky rice. I recommend soaking the rice if you have time. You can use a fine mesh strainer to rinse the rice and rub the grains of rice between your fingers. Then transfer the rice to a large bowl and allow it to soak with water for at least 20 minutes. This helps eliminate excess starch from the rice and allows for even cooking for each grain of rice (on the inside and outside), which all means fluffy non-sticky rice!
Looks amazing! I want to try this but I'm worried it may be a bit bland for my family. Would it be a good idea to add bay leaves, cardamon, cinnamon and clove (garam masala) or not? Please advise 😊
The beauty of food is that you can make alterations especially if cultures share similar tastes or types of food. I like Moroccan and Greek food and Lebanese food seems to be in that same lane.
The cooked rice looks clumpy, is it because it had been soaked slightly too long or the measuring cup for water is too big which makes the water past the 4-cup quantity?
It should be good to go if, when the rice is fully cooked, it is removed from the heat and allowed to steam for 5 minutes before uncovering and fluffing with a fork!
This recipe can also be made with parboiled rice (no need to wash) and even with basmati rice. And the vermicelli can be sautéed in 1 tbsp of olive oil, butter (including Ghee) and even in coconut oil.

i would use pumpkin seeds and sesame seeds as alternative as i can't eat peanuts :)
