- Tender pork sliced drenched in a spicy garlic lime dressing...served with fresh crunchy vegetables and topped with mint leaves. This recipe is healthy, easy and oh, so delicious! It has all the iconic flavours of Thai food: spicy, sour, sweet, and salty, but with a kick of freshness from the herbs and vegetables. The pork is simply blanched, but a technique of "velveting" keeps the pork super moist and tender.
Yes, you can sub chicken, beef, or seafood for the pork, but in Thailand this dish is always served with pork. It's apparently a popular drinking food...and I must say it goes so well with beer, but I think it would be great any time, with rice, on its own, or even in a taco!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

This helped me finagle a pork dish using some leftover pork shoulder. I know it's not authentic, but I rely on Palin to guide me toward some of the flavors that can really put oomph in a meal with whatever you have on hand. The base sauce is terrific. Because of spice-sensitive household members, I used a sweet red mini instead, and added ginger. Yo -- great!

This dressing seems like it would be amazing on shrimp or scallops too.
yes in Thailand we use raw shrimp with this sauce. but the shrimp must be very fresh and its super tasty.

edit after writing this comment i thought i'd check if you have a recipe for that too :)
She did one for chicken, but you can use pork. Laab is the same recipe. The meat is your choice. I personallly like it with fish, beef, or duck. Duck laab is my absolute favorite.
Pai, here in Chiang Mai we have some months that fresh limes are not in season, In the grocery we have lime powder, and frozen lime juice. Can you address if these substitutes are viable. So far I just don't cook Thai dishes that use lime juice in the off season of limes. Love you recipes they are WONDERFUL!!!! Keep up the good work.

This looks really good, definitely going to make it! And I tried a bottle of that red boat brand fish sauce, and I love it, so good. But it is a bit spendy but worth it at 9$ a bottle.
Love Red Boat. America's Test Kitchen did a their tests on Fish Sauces and a lower cost but still good quality brand is (surprise) Thai Kitchen. It is imported from Thailand.

Hmmmm.. looks yummy!!! I have one question though. I have in my freezer pork chop part with little bones on the side. . But I can cut it into thin slices. do u think i can blanch it also in 15 seconds? Or longer? This really looks yummy and I have all the ingredients! Yaayyy!

I ground it up this time. It’s harder to grind so I often remove it but it perfectly edible.

Chinese cuisine also relies on egg-white for velveting. At home, I velvet chicken breast all the time in barely simmering oil-greased water. Stir in the protein, cook for about 60 sec and finish later during stir fry process.
Can I use regular sugar?
Can you mince the pork like Laab or in Thailand, is it traditionally sliced thin? I am going to experiment with wild boar. Yum.

Mmmm yummy, a question though: is Moo Manao tipically to be eaten without rice or is that totally optional? I know that it's a super light dish but for some reason the shredded cabbage and broccoli stems make it look like a salad to me :)
Daniel Fritsche U r right! Typically, Thai ppl eat it in the same vein as 'Yum' or sour salad. Great alone, delish with rice (or spirits!)
