Where outside of Sydney is this Chris and what training do you guys provide. I'm still a novice in the dirtbike world but getting more into this than my road bike as it's more fun!

I only watched the vid 'cause I was wondering WTF is a "lifter". If Chris even calls it a "kicker", surely that says something. It's like when a mate told me about "drifting" in his car. I said, "What's drifting?", thinking it was something new. It turned out that it was actually nothing new, it was just a new term for "power slide". I still think the original term describes it better. Again, why change it?
The most important skill for off-road riding (from a guy who doesn't do dirt)? Scanning the terrain! I would have fixated on the log and not see the root and the smal rock. We roadies have nothing on these guys when it comes to split-second decisions!

I Dont mind the odd fallen tree but when Its wet and the tree is on an angle i tend to stuff it up... a lot.

start with stick 2 inches thick and don't put anything on the other side and practice the technique, believe me it is useful
