Man, I worked with pizza with a Calabrian and a Napolitan guy. The style and preparation of the dough in this video reminds me pretty well my caro amico Francesco (Napolitan). The Calabrese compa was Domenico. Usually made dough with olive oil too, that results in a dough with a litle bit yellow and more resistant to make the "air maneuver". And talking abouts "air maneuver" this guy combines the Schiaffo con il giro libero. Needs a quite skill and experience for that. Even Francesco didn't effort to make something like that.

Well this is the traditional oven we still have it today and bakers bake their breads in there we call it tanoor but the inside isn't wooden instead it's full of hot stones.

Excellent pizza making skills the only issue I saw was cross contamination. Using the same knife to cut pork sausage and then cheese to shellfish. Anyone who has allergies could get him in trouble.

Never understood how the cheese works here. It doesn't cover up the whole pie as well as the olive oil that just seems to be sprinkled in. So every bite is going to have different ingredients.
