- Jamie’s taken this family favourite and given it a veggie twist! Porcini mushrooms and plump lentils create a ragu that’s as rich and full of flavour as a meaty version. It’s packed with protein, contains three of your five a day and by choosing wholewheat spaghetti you’re also upping your fibre intake - spag bol the healthy choice? We’ll take that!

Can everyone shutup with the 'this isnt Bolognese without meat' just enjoy the recipe without complaining
Thank goodness someone finally said it!
Go meat!
LOL exactly!
Don't see anyone commenting that
Waiting for a veggie phili cheese steak recipe
Feel like I should comment that I’ve literally made this about 100 times now and it never fails to impress people who think veggie/vegan food is bland or ‘needs meat’. Great versatile recipe!
More easily veganized recipes/vegan recipes please! (this one was great)
He does one every Monday
Yes. I'm also very happy about this recipe.
+assassintwinat8 Hitler ate meat, the vegetarian thing is a myth (which started out as a joke)
+AnnaDeeDee and even if.... also vegans and vegetarians can be assholes. It says nothing. Even dictators can decide to not eat meat. Dosen't make every vegetarian a dictator.. :D :D
AnnaDeeDee I'm quoting NCIS here
daaaaaaaaaaamn chef that was soo delicious i just made it and wooow. im not a veggie but i had no meat in the fridge so... baaaam i made it and my little sister who hates carrots fell in love with it thaaaank youu love from Morocco
saloua terguy cool story
You didnt had meat but you had dried porcini, well thats quite interesting.
@@fourtwentyshorts hes's telling an story because he wants attention
Richard Green I use regular mushrooms and it’s still delicious. he might have done the same and (guess what) still delicious. Unecessary comment of yours :p
@@fourtwentyshorts im romanian i always have dried porcinni lol
I am going to try it, ingredients look good. I am not a vegetarian, but I could use a change.
why tho?
U R NOT ITALIAN U R INDIAN UAGLIU'
@@aistegus3104 Why not 🤦🏻♀️
Back to Jamie Oliver, my fav.
Why do you have to tell everyone you're not a vegetarian?
Wasn't it supposed to be the other way around? >__>
To everyone saying this isn't bolognese because it contains no meat: What you consider bolognese probably isn't bolognese either. Most people think of bolognese as a tomato sauce containing ground beef. Officially, bolognese uses chunks of stewing meat that's braised for a long time rather than ground meat, and it has to be a mixture of different meats including beef and lamb (and sometimes pork), not just beef.
If you're going to criticize someone else, get your own facts straight first.
It obviously been called Bolognese to make the recipe relatable. There’s no claim that this is an authentic bolognese Ragu. I guess he could have called it ‘a vegetable tomato based sauce with flavours similar to that which some may recognise from the British adaptation of a Bolognese recipe’
Thank you! My family travelled extensively in Italy for years and the idea we have of food from Bologna is often wrong. Thanks for setting the record straight!
Well then he should not call it bolognese.
cooking it right now. It smells delicious and I cant wait to try it :D really happy to see famous chefs making veggie food, making it more mainstream
good point!
Looks delicious, will definitely be trying this for myself, my son and my partner. Thank you Jamie xxx
I made this tonight and it was absolutely delicious, I can still taste it hours later.
THANK YOU for this vegetarian recipe! Please do more. I loved it!
Thank you Jamie -- looks divine!! I will definitely try this one. I love porcini mushrooms.
I have missed spag bol so much since going veggie and wasn't expecting to find a veggie recipe that lives up to it, but this sauce has that beautiful richness and those porcini mushrooms bring such a full flavour to the mix. I've been covering it in (veggie) parmesan and going through mounds of spag feeling like I'm 10 years old again. What a beauty of a recipe!
You are great cook and inspirate me a lot. Thank you .
I actually made this last night and it was heavenly, so much flavor and depth. I couldn't find the dried porcini but used mushrooms from a jar and boiled dried lentils. Amazing dish. Oh and paired it with (also doused with) a lovely cabernet sauvignon. Yummeh, 5 thumbs up!
The recipe keeps it hearty! I'm so excited to try this out!
This recipe was awesome! full of incredible tastes .Thank you Jamie 💜
Awesome!!
More vegetarian and vegan dishes please :-)
^
Looks delicious Jamie! Thanks for sharing this creative recipe!! I'd love to see more veggie recipes in the future!!! 👍
this lo0ks amazing thank you for all the veg recipes!
Made this last night! was amazing!!
This is really good, mate I am going to enjoy this veggie version. :)
I cooked this and it was so mild and rich. I can't believe I cooked THIS! Thank you so much for sharing this Jamie.
Just had it for lunch! It was great! Thank you sooo much
Fantastic Jamie, always makes it look easy. Much appreciated
Already tried it.
One of the best vegetarian recipies I've ever eat. Even my father, a non vegetarian 70 years old man, LOVED it .
3:22 "so, what I'm going to do is, STEAL a litle bit of water' Love how quirky Jamie is. My fave chef and food tuber :)
The recipe looks good and easy to see why
Awesome. Will try this sooner than later! Thanks for giving your viewers something new every time, Jaime! Cheers!
Probably first Jamie's recipe without chilly. :))
Yep. This was real good. Porcini are such an amazing mushroom. Even my daughter, who lives for pasta, thought it rocked. Thx heaps!
That was such a simple yet delicious looking dish!! I'm saving this one!! I love spaghetti!!!
Just lovely. Jamie is so gifted!!
Love the vegetarian Parmesan comment! I will have to look for that cheese :) so glad you knew that not all cheese is vegetarian! Smart guy, Mr. Oliver ;)
Every veg knows that not every cheese is vegetarian. Nothing special here really...
cheese is vegetarian. Vegetarians do not eat meat so cheese is not a problem. However, I think he meant to say vegans; they don’t eat animal products so they would avoid all things dairy
@@lamiah5604 Wow someone speaking for something they have NO clue about. Of course cheese isnt vegan, everybody knows that so why would he mention that lmao. And no, not every cheese is vegetarian. Some cheeses like parmesan and old gouda contain animal rennet taken from calve's stomachs and those calves need to be killed to obtain rennet. So again. Not every cheese is vegetarian bc vegetarian doesn't always just mean not eating meat. But also avoiding food that contains dead animal parts. Did you even watch the video? I bet you're not even vegetarian however you claim to know so much about something youre not part of...
melodramatic Wow, making assumptions are we? I’m a vegetarian and I know that there are different types but I am simply talking about the general vegetarianism out there. I know about the calf stomach cheese stuff, but there are many vegetarians who keep eating it anyway. Just like how many all vegetarians don’t eat meat but don’t shy from sweets with gelatine. And I am just commenting this because I have seen so many vegans thinking that they are vegetarian or labelling themselves vegetarian because ‘vegan’ has become so stigmatised nowadays.
I really don’t know what you think, gives you the right to reply in such a snarky manner. Making assumptions based on what? You don’t know my life. I’ve been a vegetarian for 9 years. And I never claimed to ‘know so much about it’ or be an expert of any kind. Don’t know where you’ve got that from.
Even in a case where I’m wrong, or my answer is lacking, you’ve got no reason to be this snarky and childish in a single reply. Disappointed to see that 6 people liked a comment from a person who cannot even convey their opinion in a mannered way. Your username really matches your reply.
@@lamiah5604 IKR I’m guessing they’re young and angsty or at the very least completely lacking in online etiquette and feel empowered by the “invisibility” of online interaction so they feel like they can get away with saying things in a snide way.
This has become my favourite go-to Covid lockdown recipe. I add chilli oil (or chilli's), some fresh mushies, a bit of tomato paste. And have found that boiling up dried lentils is a real treat - if you could be bothered. Yum.
This looks great! Thanks Jamie! Will try
Absolutely wonderful!
Looks good definitely going to make this, just going to use my homemade vegan parmesan on top. Thanks Jamie 💚🌍🌱
Great dish, i love this vegetarian version of ragu alla bolognese! :)
This was absolutely delishes. Thank you so much.
Omg this looks amazing im so gonna try it!
Delicious, Jamie. I'll make it tomorrow.
And congrats on your new baby boy, looks like you already! (:
Jamie, big love for doing a vegetarian version. Thanks so much and please do more.
Looks awesome ! Super Healthy
I was wondering what to make for dinner - looks amazing!
This is how I normally do my Bolognese nowadays, trying to consume less meat. Any mushrooms will do, and I also put courgette and/or aubergine. Delicious!
Nice!
Shaugi Shahab It’s not necessary, it does give a good texture but if you don’t have it at hand it’s ok.
Yiann SC I don't have Porcini Mushrooms just regular mushrooms from the fruit market. Do I still pour that boiling water over them? Will it still make a broth? I am a new vegetarian and dont wanna fail but so far I've been struggling to make nice dishes
caitliin hernandez You don’t have to boil the mushrooms if there’s enough liquid in the sauce already. Sometimes, I put more water after adding the tinned tomato- using the same tin- if I’m using dry mushrooms. If your mushrooms are fresh from the market, just add them straight when you’re browning the other veggies and before the tomatoes. I would suggest you take your time cooking, look at the food cooking, see when it starts caramelising and how things combine and harmonise. Seasoning is key, sometimes it requires a bit more salt and/or pepper at the end.
I’ve just made a Chilli sin Carne 😆, following similar rules and it was so delicious!
@@yiann.plans.videos amazing! Thanks for the tips you are a lifesaver!
thank you so much for this. you could also use ground walnuts to imitate the meaty texture, but lentils sound great.
Thanks for the suggestion! I have walnuts but no lentils
This made me so happy! I need to try this!
thank you so much for this beautiful recipe im so happy to see a veg option!
Wow these are fantastic :))) I am soo hungry now!
An alternate or in addition to lentils you can add soya mince. That gives t the texture of meat and is meaty in flavour as well. That's what i use and it's brilliant
Fine, delicious taste. Brilliant!
Awesome Receipe..can’t wait to try it with all the ingredients..
Porcini mushrooms were USD$3.50 per 10 grams at my local in Australia ($7 for 20g!) so I used Shiitake instead. Still tasted great!
Pro-tip: add a little Worcestershire sauce for an extra meaty/umami flavour! (NB: it contains anchovies, so not for strict vegetarians).
great to see this as an 1-2 times a week vegan, maybe i'll go for 3 days
the dish is not vegan though ;)
was the cheese real cheese?
+Glaaki13 yes its real cheese :)
It would be completely vegan without the cheese or you could make/use a nut or soy based cheese product to keep it vegan.
+Trollstation no it's not .cheese isn't vegan 😂
love this!! i have been waiting for it since long!!
Great Veggie meal i will defo try this thanks for sharing x
This looks really nice! What kind of lentils are you using? Any recommendations as for the type (red, green...)?
They're brown lentils and they are the recommended for a bolognese-type sauce! :)
Many thanks!
FYI, in a similar recipe he uses dried green lentils : www.jamieoliver.com/recipes/pasta-recipes/vegetable-spag-bol-with-golden-herby-breadcrumbs/
Looks awesome :) It's even vegan without the cheese :D Gonna try it out ^^
vegan parmesan is SOOOO easy to make if you have a food processor; you can get finicky and use soaked cashew nuts; I just throw a cup of raw almonds, juice of half a lemon 1/4 cup nutritional yeast, garlic powder to taste; salt as well of course ;pulse first then 1 minute on medium speed keeps forever 1 tbsp 50 calories no it's not meant to fool anyone just tastes great!
Always thankful for the veggie stuff, Jaime!
Omg that sounds and looks amazing!
I love this recipe! Note: I've added kind of accidentally an extra can of red kidney beans to it and it took it to another level! Try it! 😋😋
You can add cubed aubergine instead of mushrooms as well.
Im sure aubergine would go great in it, but IMO the porcini mushrooms were the magic ingredient in this dish. They just packed so much flavour into the sauce. I wouldn't go without them if possible!
It is simmering.. can’t wait to try it, looks and smells delicious!
Love this so much!
It makes me so happy to be able to watch my favorite chef making a veggie recipe
It isn't vegan?
Joseph Mac He putted a tonn of cheese in it so.. nope.
well that's kinda optional
Joseph Mac He mixed it in with the past and then more over it. Yes, it's kinda optional, but the recipe isn't vegan like he's doing it, he could just not add the cheese c:
Parmesan cheese is made using calf rennet and your favourite chef should know that.
looks good! more vegan/veggie videos please!
yes!!!! It was beautiful and humble food. Lentil is in my shopping grocery list.
That’s amazing !! Please give more veggie recipes
Is the wine optional? If it's needed, is there a good alternative to those who can't use it?
Ze Moch basically it just makes it sweeter. You could add almost anything sweet if you like
That really can't be three portions of veg per protions - just look when it's plated - mostly tomato sauce. Also, a tin of lentils for that much sauce isn't a lot either. I usually have much more veggies and lentils when I cook it so it's more substations, and not only pasta.
I could be wrong but I think italian style cooking is more about coating the pasta with sauce with big flavor, rather than making a dish with closer to 1-1 sauce to pasta ratio.
You're right: there aren't 3 servings of veg per portion in this recipe. Jamie's talking out of his porcini mushroom.
Well if you eat the whole pot yourself why not. That's what I would do, at least...
Beautiful! Top man Jamie. Thanks for the share🤙
Really cool that you showed this pasta dish! A similar one is a classic in my household! ❤️
Can we clone Jamie so he could be my husband and personal chef :P
I'm glad he mentioned the Parmesan not being veggie, but watch out for wines, too. Isinglass is distinctly non-vegetarian.
Why what’s in it
@@lordboros2959 isinglass is a type of gelatine made from fish bones, which is used to clarify beer and wine - there are vegetarian wines (and beers) available, but you need to be careful to buy the right type if you're vegetarian.
Keith Hanley im not even vegetarian but I believe gelatine is just wrong
@@lordboros2959 I'm not vegetarian either, although I eat a mostly vegetarian diet. I am curious, though - as a non- vegetarian, you eat meat (and/or fish) so why is gelatine wrong?
Keith Hanley because fish and meat have nutritional benifits such as protein iron vitamins etc but gelatine is nothing its just bones and ligaments and we can use plant based gelatine that taste the exact same and have the same effect on food
Nice kitchen and nice recepie. More veggie stuff please.
A different way for me to have Spaghetti, Thank You so much 😊
thank you Jamie for the vegetarian meal, is for the animals men, they do not deserve what we are doing to them :(
I agree wholeheartedly but the dairy industry is the cruelest of all. I don't miss cheese anymore but occasionly make my own substitutes.
@@julieowens7095 I've tried making vegan cheese but it failed. What recipe do you use for cheese substitutes, if you don't mind me asking?
@@rainierfrog I haven't made any actual 'cheeses' for a very long time but used a book by Miyoko, called Artisan Vegan Cheese that I got from my local library. These are mostly (all?) fermented cheeses so you have to be prepared invest time but fermented/cultured vegan cheeses are very close to the real thing. These days I only really make 'cheese' sauces, the base usually cashews though sometimes a white bean or even cauliflower, with various flavorings such as white miso, lemon juice, mustard, nutritional yeast. I can't help you with a specific recipe because even if I follow one it's very loosely and I usually end up just adding what I feel, tasting as I go. Oh, onion powder is good too and sometime I use some pumpkin for flavour, nutrition and colour too.
@@julieowens7095 thank you!
Could you do a lentil lasagna pleaseeeeeeeeee.
It’s jaw dropping wow. Looks super delicious
Looks amazing!
This is amazing with beef mince
You don't say? hahaha
Yes!!! Delicious I'll make this :) (w/ vegan cheese or no cheese I guess hah)
Just Vegan Things burgers samuel
Grind some cashews and nutritional yeast, add some onion powder and sprinkle on top instead of Parmesan 🌻🌻🌻
I'm trying this, looks so good
jamie u make my mouth watery i need to cook and c how it comes out thanks for veg recisepi
We want more vegan recipes ❤️🤤🤤🤤
Tried this one, tastes great with some meat in it.
OMG I made this today! it is so good!
Love it Jamie! Really loving your new book. I've cooked a lot from it. Probably my favourite book of yours yet :)
"its just 20g of porcini.."
Dude 20g alone costs alot!
100g / 19€ Here :D
is there a whole wheat pasta that doesn't have the weird texture to it?
Do you have the brand Barilla where you are? We use their wholwheat pasta all the time. My kids love it too.
+Rebecca I will look for it. I just fond the pasta not as smooth and kinda chewy even if I cook it according to the package directions.
I know what you mean. I found that too. Sometimes i boil it for a little longer just to help give it a smooth texture. Not too much longer though otherwise it's too soft :)
Whole Foods brand is excellent. Also try Delallo's
We made the switch to whole wheat several years ago. At first, I thought it was weird and didn't like the texture, but I found if I cooked it a couple minutes longer, it took that extra texture away without making it too soggy. Also, after eating it for a while, you do get used to it. White pasta now tastes very bland to me.
I want to try this,awesome Jamie👍🏻
So nice kitchen. And food ofcourse
I'm glad you're doing more (semi) vegan dishes now. besides the cheese obviously
so basically the secret to become a successful chef on youtube is saying "lovely" every 5 seconds
Lol Jamie was successful long before UA-cam 🙄
Jamie Oliver was famous before UA-cam existed. :)
Or maybe being a great chef ...
Lovely, hater.
Looks great! I make veggie sketti sauce often! Love Jamie’s show n recipes!!!!
Ahna USA
That looks fantastic. Very healthy too.
This looks lovely but I would add peas instead of lentils! Kisses
Interesting idea!
I thought that lentils were dried halved peas ?
Really good stuff, just drop the cheese and it'd be perfect! 😉
Agreed! 😁 hopefully some really good stuff on my new channel too; croissants, pain au chocolat, eclairs, chocolate caramels etc!
+Tri I think he meant that he'd go for the vegan variation of this recipe so your (I'm sure very nice tasting) bakery wouldn't be right up his alley since they probably include eggs, butter etc. :)
+ShaleeOcean 😂 understood! In that case you're very right!
Tri If you include a vegan recipe I'd definitely check it out as would may other vegans 😉
+Earthling Carl I'll put my thinking cap on for sure 😊
I made this for my wife tonight and it turned out amazing. I added some sun dried tomatoes because I had them around, I used shiitake because I couldn't find porcini, and I used vegan parmesan. Thank you very much.
Must try this
