Sorry......the best catfish I have ever eaten was fried in home rendered lard. I had NO idea what they had fried fish, fries, and hushpuppies in until I ask. I was SHOCKED to say the least. But it was AWESOME!

Lard, ghee, and peanut oil for deep frying. For pan searing bacon grease or olive oil. If you can get it/afford it potatoes fried in beef or duck fat is amazing.

Almost all oils are over processed, and as such, minimally processed oils are only available with certain oils, virgin olive oils, and avocado oil. I do believe that this is a problem. It is hard to source good healthy solutions. Avocado oil is neutral in flavor and can be used like vegetable oil.

It's good to see that most people that know Canola (Rapeseed) and other seed oils are bad and there are much much better options. Unfortunately Mashed is still using 20 year old health advice.

If I had a steam engine, I would use
rapeseed oil to lube it. I CERTAINLY
would NOT be cooking in it!
Just what is vegetable oil? Wouldn't
    rapeseed oil be vegetable oil?

There's a vid on YT about how Canola Oil is made ... watch that once, and you'll never buy it again.

2 parts peanut oil with one part avocado oil is what I use to fry everything. Does not impart any other flavor into the batter or food. Far superior to canola oil.

Well, you may be right about the flavor of the fish, but you obviously don't give a thought to HEALTH! Seed oils are very inflammatory and cause joint pain and other health problems, even with the heart! Use natural fats like tallow, lard, or butter. We need to consider our health!! 😮😮

One Thanksgiving we deep fried a turkey and it tasted awful just horrible. I looked at the oil and it was mainly soy bean oil. OMG. I will never use that nasty oil ever again. My ruined turkey taught me a huge lesson. Watch closely at what you use.
