Way to go Maya! I’ve never made these before, but I believe she may have over kneaded them, which may be why they may be more dense. Happens with biscuits. I think what could make them a bit fluffier is to separate the yolks from the whites, the. Mix whites until a soft peak. Then slowly mix white fluff with the rest of the dough gently. Keep trying Maya! The only way to get better is to keep making them. Practice makes perfect.
I love when you do things like this to immerse yourself more in the culture. I too am very Americanized, I know very little Spanish - often I've been told I speak Spanish like a 3 year old, and I try to learn about my heritage through different parts like cooking/baking; mostly baking since that is a hobby for me. Without know the exact measurements from the recipe, it's hard to know if there is anything to improve on that front. But on technique (at least from what we have seen in this video): for a more "panaderia" fluffier concha, definitely use a stand mixer; also, the dough needs to be sticky, gooey and smooth - although pan dulces were an adaptation from french baking brought to Mexico when France was ruling, the doughs are wetter compared to traditional European/Westerner doughs. Sometimes weather - temperature and humidity - affect how much or little the flour absorbs the liquid ingredients so even if you've followed the recipe exactly, the texture will be thrown off if you don't adjust for these atmospheric variables. But you've done an amazing job!!! I'm so happy for you! :)
Alexander Bruno That's a good start! I have been studying Spanish for 8 years and can speak with intermediate fluency. I recommend that and look for school books online. I bought Exprésate years 1-3 for under $20 and it breaks down grammar and covers several tenses so it helps to build a solid foundation. My biggest thing is I am not sure how to describe everything around me in Spanish...I don't know all of the vocabulary I need to know.

Hey Maya I'm Mexican and I love bread, my sister who's the food expert has tried baking conchas and from what I have seen you need to be extra careful with the "amazado". It was makes a hole difference, the bread gets fluffy and soft, so maybe you should try to do it a little bit longer whenever you are preparing bread. Love your work, keep doing so amazing videos.
Level the flour in the measuring cup before you add it to the bowl. That way you get the right amount of flour. I'm not an expert but I think that's why it was breadier than usual. But, this was so cute watching you struggling through Spanish. I can relate since I'm always trying to learn a language.

I struggle with the same problems as Maya (Having trouble learning Spanish) I was fluent as a child but I moved to Arizona and forgot everything.Im still learning but it does take a while for me to learn what each word means and how to properly pronounce it.Anyways,I love this channel and those conchas do look good.
Good job making conchas. I know part of the challenge for the video was having the recipe in Spanish but if you are looking for some good, authentic recipes to try, I reccommend Diana Kennedy's cook books. She is British but got all of her recipes while living in Mexico. I think you should try making corn tortillas next
