    I realize watching your channel that no need to have complicated or fancy ingredients to make tasty food..what is more important is to know the right cooking techniques to bring out the best flavor in the ingredients we are using. I always have problems browning chicken, most times my chicken will either be overcooked (too dry) or worse, under cooked so the technique of using aluminium foil and not entirely covering the chicken is really the answer to my question. You always learn a thing or two in this channel. Thank you Chef, and happy new year!

    HAPPY NEW YEAR! ima try this out this week, does the low heat get that bottom cooked good? I saw the chicken look completely cooked. Im just shocked at how hot the low heat can get. Im always so finicky with chicken sometimes

      Thats because low heat is styll very hot, it’ill just take longer. For me, I like checking the readiness of my chicken if my fork can go through the thickest part without resistance. Best i can do without a thermometer

      @@CloroxBleach-yb3ox ahhhhh thanks for the fork tip, I typically end up with like longer cooked chicken. Its still delicious like a 7, but ik the chicken can be an 8 or even a 9 if done right.
      Uk? And ohhh okay, I should be more mindful of how hot low heat can be. I underestimate it alot, ngl.

      Citrus works well with honey, so it's kind of make sense.

    I wish grocery stores in America had boneless, skin-on chicken thighs. It's always either boneless and skinless or just a whole thigh. It's so mendo cutting the bones out that I usually just buy the skinless

      Hi Sisilia!
      I recommend to use MSG for making kombu salt.
      Because Dashi powder has flavour from bonito in it.
      So use that for other dish like slow cooking stuff,
      and use MSG for kombu salt if you are ok with it😉

    Wait, you cook one side of the chicken on medium high, but the other only on low heat? Doesn't this make the chicken uneven?

      Good question Garlyle助手くん!!
      If you cook the other side with high heat,
      it brown the meat. But it gets tough at same time.
      So cook on low heat prevents that chemistry to happen,
      and save the juiciness from the brine soaking process.
      We got nice brown colour and flavour on the skin.
      Then I focus on saving the soft texture on the other side for the texture contrast😉
      But it could be depends on your preference.
      If you like crispy texture on both side,
      cook on high heat on both side can be your best answer!!
      So have a try on both ways if you are curious!!👍👍
