According to the movie's script, the scarabs that the Egyptian poured into Imhotep's sarcophagus were harmless dung beetles and being sealed in the sarcophagus with him caused them to go hungry over time. They were forced to eat him because he was the only food available, but since he was cursed, the consumption of his flesh transferred the curse into them and this is how they became the flesh-eaters that they are throughout the rest of the movie.
I saw this movie as a child and I was absolutely TERRIFIED of these beetles. I thought they were everywhere in Egypt and so I decided I NEVER wanted to go there ever. I was so terrified of the beetles.
Man, when you're watching the 2017 version of "The Mummy" (with Tom Cruise), you would say, "Man, I miss the scarabs." One of the reasons people hate this reboot is there weren't enough scares, as these scarabs scared us when we were kids.
