    Although it is a PITA to go through the rigmarole have a go at Toms chips. 1/ Unwashed Maris Piper potatoes (drier than washed ones). 2/. Top & tail the spuds before cutting them with an Apple corer (I bought an Apple corer just for this job!). 3/. Put the raw chips into salted boiling water for about 15 minutes to start cooking process. 4/. Take them out carefully and put them onto kitchen paper. Spread them out to dry and cool. 5/. Put them into deep fat fryer set to 140 C for 10 minutes. 6/. Take them out and again leave them on kitchen paper. 7/. Back into the deep fat fryer for another 10 minutes but at 170 C. Lots of work maybe but these are the best chips I've ever eaten. First time I cooked a load of them as we were entertaining friends. Gave myself blisters on my hand due to combination of wet hands and twisting the Apple corer. Avoided that going forward.👍

    Put Michael's steak with Tom's chips and we might have something because for me fillet is nice in a Beef Wellington but just steak on its own you need a more flavourful cut like Sirloin or preferably Rump which has always been my favourite cut.

    Its incredible that Chef Michael Caine is capable of becoming a 2 star chef with one arm....Toms steak and fries were definitely better...I find the filet of beef is butter once cooked correctly

    What is the needs for leaving the cling film on the steak when searing? when we take it off half way through anyway?

    Tom Kerridge has lost a ton of weight. Looks a lot leaner now.

    That amount of sugar in a sauce for a steak doesn't sit too well with me for some reason , it looked like a dessert sauce.

    Cling film is dangerous to use in cooking!! It contains carcinogens!! Never never use cling film in cooking!! I'm shocked by Tom a great chef using it for cooking!!

      You have no idea what you're talking about here. Also remember that cling that you get at your local grocery isn't what a commercial kitchen uses. Almost every kitchen the commercial space uses it at high Temps and it's designed not to pick up heat. It such a poor conducter that it can't get to dangerous Temps even when the surrounding Temps are much higher. I. E. You can stick your hand in a 350 oven for some time, but try that with 350 with oil or water.

    nice but tom kerridge has wasted so much of that potato just to get cylindrical shaped chips, just cut em normally so u dont waste

      Coke Dinosaur steak is not really health if cooked in butter but gives best flavour using butter plus if your doing expensive cuts of meat health shouldn't matter as it a treat so do it right

    I'm always shocked to see great chef's cooking food in clingfilm!! It's casonagenic! People have been warned for over 30 year's the danger of using clingfilm in cooking!! Why don't these chef's know?

    20 seconds in and I'm out. The perfect steak is a rib eye, people who choose a filet over a rib eye sicken me almost as much as vegetarians do.

      What i meant by it was, Rib-eye is a shitty cut forced into fashion by butchers and chefs so idiots like you who dont understand, buy it. I worked in catering, i doubt you've worked at all with your cuts of fatty poverty beef you fucking gypsy.

    The Worst of this is, Not only does he attempt fancy pub grub but he's basically borrowing Jamie Oliver's act. Jamie (current worth approx £27M), can afford to use naff phrases and make daft noises, he's kinda earned the right, but this........pub cook just sound like he needs a gimmick so he thinks trying to phrase like Jamie Oliver is going to make him popular.

      Nice trolling, however Tom Kerridge is the patron of the only pub in the world that has 2 Michelin stars, Jamie Oliver is a fake chef that was only ever in it to get on telly, Kerridge worked and built up his pub for 8 years without earning a wage
      Jamie Oliver got out of the kitchen as soon has an agent contacted him. Oliver is nothing other than 'a breadhead'
      Real chefs do not cook for the money. I should know I am a professional chef.

      bond bug Kerridge worked in numerous michelin establishments before buying the Hand and Flowers and working 6 days a week(14 hour s a day) for 8 years living hand to mouth ploughing every penny back into the business so how you can say he is not a chef is beyond me, are you just another troll ?

    £87 for a steak Tom? I'm all for giving staff a decent wage, but £87 for a steak is downright daylight robbery, I'm all for profit too, but some of the prices you charge is morally wrong, and sadly its pure greed because you, yes you, can't even justify the price you charge, I'm extremely disappointed with you, I was a fan, but not anymore.
