Since the divorce I've been living with my 85 year old mother and her health has been worsening over the last couple of years, so I've had to become the house chef. Mother has taught me many of her recipes and I have to say my dishes have been graded by my 3 older sisters. They have given me an A+ in cooking class. I have grilled steak many times over the stove top but I have yet to be proud of some of the messes I have made. Watching your demonstration (and I've seen many demo's), your's, sincerely, was the most impressive that I have seen. So I went out and bought a couple of Rib-eyes for mother and I and pulled you up on UA-cam. I followed your foot-steps exactly including the sauce. The result......Finger licking good. My mother hasn't eaten very well in the last few days but I'll be a 🐎 horses uncle she ate the whole steak including a small spinach salad I served on the side. I would like to thank you for a beautiful demonstration and also for teaching me how to make a delicious steak sauce. I thank you and mother sends her best wishes and says she will say a little prayer 🙏 for you and yours wishing you good health and happiness.

Get a cast iron skillet and season it ! Doesn't have to be expensive, I use a cheap one I got from an Asian market. Makes searing the steak so much easier.

Superb!! Same way as I do mine. Kinda' like a Steak Diane. This is excellent with a watercress and finely diced Juliet and sweet onion salad doused with olive oil a portion of the pan drippings (before the cream and butter is added to it) and a baked yellow potatoe with plenty of butter
Well We’ll I have just had a delivery , from our local Butcher , and I ordered 2 very Large Sirloin Steaks they cost me £15.60 I Love Sirlion , (I also Love Ribeye ) But they are much bigger then the one you showed us today , I have always grilled steak , but I will heat my pan and follow your steps . but I don’t want as much pepper in mine , we are looking forward to it . Due to this nasty COVID 19 I can’t get to my Butcher , but the butcher can get to me , thank god . I also asked for a Full breast of Lamb with bones left in , to make a Lamb stew , that’s a childhood favourite of mine Delicious . I could not live without meat , I have just subscribed to you . And thank you , for a new way for me to cook my steak . Saly .

I had a steak at a riverboat gambling establishment in Metropolis, IL. It was a ribeye and what the chef called a brown caper sauce🥰 I haven't had a meal that great since.
This is excellent. I also appreciate his endorsement of actual butchers as opposed to the supermarket. I did get a kick out of “heavily pepper” and “touch of salt,” since he seemed to lightly pepper and heavily salt.
I have followed this video and had great results ❤. I was buying my steak today and couldn’t remember what oil to use. I thought it was olive oil but my dad said you don’t use olive oil at high heat. Now I’m confused. Maybe it’s extra virgin olive oil that you shouldn’t use at high heat? I do remember reading about olive oil at high heat

I'm so glad you included that last shot, however brief, of the steak cut open. It's important to see the color of the meat to determine weather it was correctly cooked, and this one looked quite delicious. I do think you should invest in a good pepper grinder, however. Yours seems woefully inadequate.
Oh my! Just made this instead of grilling outside .. spectacular! 'Um, tho ...I am a Yank and added my leftover half can of mushrooms to the sauce ... really, REALLY good! :-P
I gave up on modern pepper grinders after going through a few like his. Now I use pre-ground pepper or crush whole peppercorns with the mortar and pestle to get the perfect "cracked" course ground effect. I find the modern plastic ceramic grinders generally just don't work very well, especially for a nice course grind...
So, to start with, we soak the steak in lots of oil on both sides. Then after some time cooking, we add tons of butter in the pan while it cooks longer, and then to top it all off, we make a nice gravy with lots of butter again. Then we poor the all the gravy onto the steak (!) So much for healthy eating.
ADD A TOPPING : Onions, peppers, mushrooms, garlic. Saute (always in butter and don't burn) some THINNLY SLICED: sweet or regular onions, sweet peppers of all colors, mushrooms and garlic. Saute them no more than 3 minutes total while stirring them. Don't over cook them. Then add in drained sliced or diced pimento. You want soft/crunchy sauteed veggies. Don't over cook the veggies, unless you like sauteed mush. Season with salt and pepper to taste. Remember - everything tastes better in butter! Now I have to go - I'm hungry!
If you have no charcoal or propane bbq and/or flame not allowed, you could use an induction hotplate (dreamkitchen.solutions/best-induction-hotplate) on your balcony or porch.
Ramsay (another Scotsman) adds garlic and thyme to the butter and dispenses with the red wine sauce, but does confirm what we all know - leave the steak for several minutes untouched after removing it from the heat so it can retain the juices. Well done, nice accent too.

QUESTION. In the initial stages, the pan spits oil all over the stove top and floor and bench. You don't seem to have this problem.

I'm not so sure of heating a non stick pan on high for 10 minutes and then eating anything out of it. Technique with a carbon pan is spot on though .
NEVER overheat a non-stick pan! This method is ONLY for cast iron.
