    The classic Calcutta fruitcake-a fixture in many homes around Christmas-time-is a rum-soaked, fruit-and-nut encrusted indulgence. Fruitcakes are a big deal in Calcutta. Come Christmas, shops spring up all over the city selling Christmas cakes, or ‘Borodin’er cake’. The tradition of baking, gifting, and eating plum cakes around Christmas is an old one, popularised in Kolkata by bakers like Nahoum and Saldanha to a wider section of the population. Families celebrating Christmas soak their dried fruits weeks in advance and book their slots with their local bakers for community baking of their cakes. Making a Christmas fruitcake at home is easy, to say nothing of rewarding. Such fruitcakes contain their characteristic booze-soaked fruits, are full of textured nuts, all of which can be customised in dozens of ways.     NO BAKING POWDER? This cake does not use baking powder, baking soda or any leavening agent. That is because this is an old-fashioned cake that is rich, dense, moist and heavy. Look at the cross section of the cake in the video, you will see there are no air-pockets. If you are looking for a light spongy cake, this recipe is not for you.

    I made this cake last year and it was a hit! Like all my family and friends and relatives loved it so much that they couldn't stop praising it. Even though I replaced brown sugar with white. Can't wait to make it this year again. Thank you for this gem!

    After searching for months, finally I've found the perfect receipe for a fruit cake.
    There are many recipes on your channel which have some extra steps but then at the end when the dishes turn out to be just perfect, it all makes sense.
    I have finally found a channel i can blindly rely upon knowing that at the end the dish that will turn up is going to be nothing but perfect.

    Thank you for your recipe, tried yesterday and it came perfect. To add on, after spraining the soaked dry fruits, I had kept the rum aside and used the same for feeding the cake as it had a lot of the fruit juices as well. Thank you.

    This is my first time making a mixed fruit cake. I made half a batch in a 8 inch round cake pan. It took 1.5 hrs to bake. I must say it turned out pretty good. Thank you for inspiring me.

    If I may add to this recipe, as a baker, the texture looks a bit dry and structured for a Christmas cake, you can achieve more moisture by 1. Whizzing the sugar a bit, 2. Soften and whip butter till white before adding sugar then eggs one by one, alternatively you can mix all the eggs together, give them a light whisk and pour little by little as you you whisk 3, proportion to flour and fruits - reduce flour, increase fruits. You can boil all the presoaked fruits quickly, cool down before adding to flour egg mixture. Cake becomes very moist and holds shape too. Prick more holes and feed cake with alcohol for longer shelf life and flavour. Dark rum or brandy with cherry liqueur or Cointreau works great. Also add freshly squeezed orange juice in your cake mixture, don’t forget your baking powder and soda.

      @@Nancivlog Hi, you don't need any baking soda/baking powder because the eggs and butter (the creaming technique) will give it all the rise. The cake will be dense but moist and delicious. It is a traditional pound cake recipe and so you don't need any other leavening agents. Try the recipe as is, you'll be happily surprised.

      I guess some of the leavening comes from whisking the eggs and butter, other than that it remains dense.

      Yes the creaming method helps in leavening...but more importantly der is no need of baking pow/soda coz the texture of cake is supposed to be dense..it tastes great that way..(like fudgy n not fluffy)

    This one took me.back to my childhood. I remember during Christmas everyone used to gather at the church ( even non Christians ) and every house hold of the town used to get one ingredient and the mixture was made in a huge bowl and then baked in the clay fire place. This reminded me of all those days...

    Nc receipe same way i make for every Christmas but one thing I would like to suggest never break egg directly in bcoz sometimes eggs come rotten one that might spoil the whole batter, so better to crack in separate bowl other wise u guys rock ami tomar subscriber hocchi khub valo love u guys ❤️

    My sister and I soaked the fruits in rum yesterday. We also made a load of your Pujo recipes this year, from chowmein-chilli chicken to dim-er devil. She's getting married next year and moving away, so we probably won't get a chance to do this kind of stuff very often anymore.

      Not really, for this recipe. Eggs serve more than one purpose in cakes. Removing them will disbalance some reaction or the other, apart, of course, from compromising on flavour.

    Tried this cake.. nd it came so well n delicious.. couldn't take a pic except fr a slice which I kept fr myself.. it tasted heaven even though I wasn't having crystallized ginger, orange zest, dates. Rest followed same. Instead of dates I added prunes

    Canadian here. This looks like an interesting variation! I normally only use pecans or walnuts in my fruit cakes. I will give this recipe a try. :)

      It doesn't require baking soda/powder. It is supposed to be dense and rich, not fluffy or spongy!

    I tried this and it came out exceptionally well. Can't thank you enough for the recipe.. U ppl r just brilliant. However some humble suggestions.
    1. Everyone may not have the same size cake tin so the ingredients can be taken proportionately and the cooking time should also adjusted accordingly. I took half portions and could bake it in 90 minutes.
    2. I checked this video not long ago and didn't have time to soak the dry fruits for 15 days. So as I learnt from other channels and accordingly I just soaked it for 3 days and then simmered the dry fruits in gas oven with alcohol for 5 minutes. We can do it for 10 minutes if we haven't soaked it at all.

      We have not tried it, but some viewers had recommended using orange juice. But in that case the soaking is going to be much shorter (may be overnight?)

    The most authentic and detailed recipie of the plum cake I have coma across. Tried it also and it turned out amazing . FYI- I skipped the feeding cake bit . The cake still tasted very delicious .
