Wouldn't the black jack give a bitter taste...as you have cooked the sugar n jaggery for so long time.. Like if we caramelize sugar even a bit more, it turns bitter..
Hi Chef, My name is Bhawna Tyagi . I am a home baker and trust me i tried so so so many eggless christmas cake recipes in past. Infact even after doing paid courses for the same i could not make good christmas cakes with that perfect traditional taste and all. After giving up on all the hopes i came across this video and then i tried and trust me “I LOVED IT”!!!!. I got all my facts clear as this was a highly descriptive video! Secondly i appreciate how easy you made for me to make black jack this tear i made and store almost 500 grams of black jack in one go and stored it! Thirdly i made a few changes according to my convenience.. like i mixed all the spices together and stored in an airtight container. And I used half part oil and half part butter for the softness and lastly i whipped up all the wet ingredients and gave me that perfect spongy and airy texture

I made this cake today following all the steps. Made black jack as well. The cake tastes amazing. The slight bitterness from black jack is cut by cherries and berries coming in between. It has perfect amount of spice and sugar. I will surely make this again. Takes a lot of effort to make but worth the effort.

Lovely recipe chef. A small tip for everyone here - the caramelized sugar temp gets so high that you should always use a wooden spoon. Even my good quality silicone spatula had puffed up a bit and I had to remove it immediately to save it.

What an amazing recipe and that too just when I needed it. I tried the version with eggs and it turned out perfect. But I'd like to add that if you are not using condensed milk you'd have to add around 1 cup brown sugar....1/3rd cup as mentioned in the recipe is not sufficient.
I made this cake for my parents’ anniversary with eggs and with kismish soaked in rum for 5 days in the exact same proportions you suggested here. Turned out AMAZING! I’ve tried SO many other recipes online, but none of them came this close to perfection. It’s a fool proof recipe. Cannot wait to try the eggless version someday. My parents were super happy!

I tried it. It turned out really amazing. Within 5 minutes, the cake has been eaten by my family 😅. My black jack was a little bit less black as I was afraid of getting it burned. But it was bitter and gave really good color too. Thanks for the recipe. 😊
This cake turns out gorgeous!!! I felt like eating up the batter even before it was baked 😋 the recipe is so well done, it is foolproof. Only the blackjack is harder to make than it looks on video. The best cake I've ever made. I used OLD Monk rum instead of orange juice and prunes instead of any other berries/tutti fruti. Soaked them for 7 days. I also added 40 grams walnuts and 20 grams cashews in the batter, added almonds from the top. I forgot to add the lemon and orange zest but it still was awesome.
So I made 2 versions. 1 with cranberry juice instead of orange juice, another with rum.. exact same recipe just replaced orange juice with equal qty to cranberry juice and rum, respectively.. And it was aweeesomeeee 😀😀😁 thanks so much for this recipe 👏

What a detailed recipe! Its like attending a tutorial. I was mentally listing my questions to raise in the comments after watching the full video but by the end all my questions were raised by yourself and answered so well too. I always baked Christmas fruit cake with Cocoa. Never heard of blackjack (what a name!😁) before this. Chef Sanjyot I have one doubt still. Hope you will find time to answer. The caramelized sugar and jaggery syrup ..if we leave it in the pan to cool down before adding water, it continues to cook even off the flame isn't it? Whenever I make sugar caramel I add hot water after turning off the flame just when it reaches the colour that I want. It is safe enough then. Adding cold water of course should be avoided as like you said it splatters and can cause burn injury. So here too can I add hot water immediately after taking it off the flame to arrest further cooking? Will it affect the taste in any way? I have to bake eggless plum cake for my veggie friends in two days time and I have been checking different channels. All look good and shortlisted one recipe too, but yours sounds convincing. Will go ahead with this. If I don't hear from you by then I will make blackjack the way you have shown. Thank you so very much.
Tried this recipe , brilliant outcome.I used rum soaked dry fruits. Only 5 days I soaked prior to the day when I baked this goodness. Man, the most decadent Christmas cake I ever had. Try with rum brandy soaked dry fruits. Only thing I missed was I used a circular cake tin that was pretty wide. I will buy the tin that bakes a loaf for next time. The presentation would be bang on that way

Tried this yesterday for a Christmas party at my place and the cake turned out to be amazing 😍 everyone loved it. I made 2 loaves so I had to double the quantity. Only thing is I made it with eggs and thought 8 eggs (for double quantity) would be too much so I used 5 eggs and also I increased the quantity of sugar used with eggs I.e. Instead of 1/3rd cup I used 3/4th cup as it was less sweet. Other than that everything was perfect. Wish I could share a picture! Thanks for the recipe and merry Christmas 👍

I tried it. It turned out really amazing. Within 5 minutes, the cake has been eaten by my family 😅. My black jack was a little bit less black as I was afraid of getting it burned. But it was bitter and gave really good color too. Thanks for the recipe. 😊
This cake turns out gorgeous!!! I felt like eating up the batter even before it was baked 😋 the recipe is so well done, it is foolproof. Only the blackjack is harder to make than it looks on video. I made a version with alcohol and one without and both are just superb. Thank you so so much chef!!! Big fan here

Last year I was looking for an eggless alcohol free version of the traditional Christmas plum cake. . Saw so many. N then came across Sanjyots recipe.
It's seemed so easy that I decided of making this one... Altho other recipes were easier, but somehow my heart was convinced with this one...

I baked this cake today with all the ingredients following all the measurements it turned out to be great. It was just melting in mouth I was feeling like finishing the whole cake alone but controlled myself 🥰.

Yes tetra pack and followed all the procedure and bake it for 150 degree for 45min /1hr. Check it after 45 min

The best cake I've ever made.
I used OLD Monk rum instead of orange juice and prunes instead of any other berries/tutti fruti. Soaked them for 7 days. I also added 40 grams walnuts and 20 grams cashews in the batter, added almonds from the top. I forgot to add the lemon and orange zest but it still was awesome.
You made me want to bake it.. soaked dry fruits already, will bake on Xmas Eve and let you know the results.. kudos to you and thank you very much 🎉
So I made 2 versions. 1 with cranberry juice instead of orange juice, another with rum.. exact same recipe just replaced orange juice with equal qty to cranberry juice and rum, respectively.. And it was aweeesomeeee 😀😀😁 thanks so much for this recipe 👏

I always baked Christmas fruit cake with Cocoa. Never heard of blackjack (what a name!😁) before this.

The caramelized sugar and jaggery syrup ..if we leave it in the pan to cool down before adding water, it continues to cook even off the flame isn't it? Whenever I make sugar caramel I add hot water after turning off the flame just when it reaches the colour that I want. It is safe enough then. Adding cold water of course should be avoided as like you said it splatters and can cause burn injury.
So here too can I add hot water immediately after taking it off the flame to arrest further cooking? Will it affect the taste in any way?
I have to bake eggless plum cake for my veggie friends in two days time and I have been checking different channels. All look good and shortlisted one recipe too, but yours sounds convincing. Will go ahead with this. If I don't hear from you by then I will make blackjack the way you have shown.

Tried this recipe , brilliant outcome.I used rum soaked dry fruits. Only 5 days I soaked prior to the day when I baked this goodness. Man, the most decadent Christmas cake I ever had. Try with rum brandy soaked dry fruits. Only thing I missed was I used a circular cake tin that was pretty wide. I will buy the tin that bakes a loaf for next time. The presentation would be bang on that way

Tried this yesterday for a Christmas party at my place and the cake turned out to be amazing 😍 everyone loved it. I made 2 loaves so I had to double the quantity. Only thing is I made it with eggs and thought 8 eggs (for double quantity) would be too much so I used 5 eggs and also I increased the quantity of sugar used with eggs I.e. Instead of 1/3rd cup I used 3/4th cup as it was less sweet. Other than that everything was perfect. Wish I could share a picture! Thanks for the recipe and merry Christmas 👍
