    I will definitely give this recipe a try. I really don’t like the wheaty taste of seitan and so this is a great looking alternative!

      I made this recipe today, it turned out great. The only slight modifications I made was to add a few chilli flakes, and I didn’t have any fennel seeds so I added a pinch of dried tarragon instead. The best vegan sausage I’ve tasted so far.

    I watched this video a couple of times and decided to try using the lentils in place of hamburger for tacos. Worked out great! I think it would make an awesome taco salad, which is next on the list...Thank you for using lentils and giving me ideas!

    You know what I've done for seitan that would work for this as well? Parchment paper. Yes, roll up your roll first in parchment paper that creates a layer of protection between the roll and the plastic. Then wrap the entire roll up tighter with the plastic/cling wrap. This is how I've been protecting my food for years. And it works perfectly for protecting your food from aluminum contact as well.

      Thank you. I just rinsed and drained them in a strainer and spread them out on a pan. Put in oven on low (about 250F) until dry. They will stick together a little just break them apart when they cool.

      have you ever thought about cooking the Lentilogna Pepperoni with the double boiler method it would cook better with out sticking

      If you click on my channel page, in the recipe playlist is the video from Nest and Glow. It is the one I followed, I just put it under a broiler after it set up. I will probably go ahead and do one. The doggies said, "Thank you!"

    I'm wondering if you could put it in a dehydrator to give it that dried out jerky texture you'd get from non vegan pepperoni.

      Can't tell until we try. Let me know if it turns out or if it ends up grainy like crushed dried beans. Homemade vegan jerky would be awesome.

    pepperoni is not smoked, just cured...wonder if i can use basic pepperoni seasoning with this recipe..will try

      No, they were dried lentils like you get in the grocery store.
